Well, the idea was to have docks on the sides of the walls to the water. The reason for the fame being by the water is for easier irrigation. But it can always be moved around easily which is why I like the structure of my map.

Well, all we would have to do with the farms is build a spring and you can do that just about anywhere if you have two buckets of water.
I do agree though, when you think farm you think of the surrounding areas of a town, not inside the town. Whereas a port would be a major point of interest of a city. You could have the dock house inside with a small 2x1 wood going out to the actual dock itself. You can even set it up so that it closes behind you automatically as you enter and leave the city with that redstone stuff.
Also, which map was Scybers? I see Mrrtn's, but I don't see Scyber's...
After hearing some suggest from you guys, Junction and I designed a very rough layout of the city we can build. I really liked liquorice's circle idea. I think it adds a bit of organicness to the design. I also like the idea of separated areas for specific types of buildings.
Town Hall - center of the town. Will house records and a meeting place. very ornate and elaborate.
Residential - Places for homes. We will need a lot of space for housing so it will be split into two areas. Houses will be lowered to a 10x10 square. really just a place to house a personal stash and whatever else you want. Buildings will be made from wood and red brick.
Commercial/industrial - place to house raw materials and items and also workbenches and furnaces. Buildings will be made from stone.
Farm - area closest to water for farming trees and food. Buildings out of dirt and raw lumber.
mining site- hubs for mining areas. We can create more mining sites when needed.
Future plans - areas that have not been made yet but we can expand for whatever else we want to build.
Basically, the city is designed in a honeycomb structure so we can expand indefinitely when needed. Walls (4 high) with a three wide path will be built from one area to the other. For quick transportation, there will be a underground rail system that goes to each area. The central minecart station will be located on the bottom floor of the town hall.

This seems to damn asesome, it really would be cool to play, but I don't see myself dedicating the time to it. I will be following the development though, be sure of that.
In terms of the organic design, won't curved roads be insanely hard to make? And ugly to boot? And what about city walls, when monsters come around in the future it would seem prudent to always wall in new city sections, which also lends it self much better to rectangular shapes.
That, and you're all americans. You should be used to grid-based city layouts
PlugY for Diablo II allows you to reset skills and stats, transfer items between characters in singleplayer, obtain all ladder runewords and do all Uberquests while offline. It is the only way to do all of the above. Please use it.
Supporting big shoulderpads and flashy armor since 2004.
I just feel the square/rectangle is too easy. Making circular areas would look more "complex". The roads and stuff would not have to be circular though. The circles themselves could be dissected with straight roads.

Please note that my idea was only for the wall around the town hall/center area. Then basically you would branch off in each direction with straight roads and the districts won't have to be circular. I tried making a simple circle shape and it does not look that bad, in fact I think it's pretty awesome (see pic in previous post or just log on the server and check it out).
Of course the buildings inside could still be square/rectangular.
Our computer screens are made out of squares. Yet everything on my screen is not square/rectangular  (or is it :>?)
Ok, that's comment is a bit silly, but nonetheless. I don't think that just because minecraft is a game based on cubes everything should be made rectangular or square. Sure it's more practical, but doesn't give a lot of freedom in design. And in my opinion I think a wall would just look and feel a lot more awesome than a generic square one.
Anyway, I think this is taken quite out of proportion. All I am suggesting is: The center piece of the city, aka the Town Hall or the core if you will, should be surrounded by a circular wall instead of a square one (I know, I'm repeating myself) Likely, 90% of our other buildings and general design should probably be based on square/rectangular design. I'm not sure about designing our whole city around circles or hexagons as Scyber seems to be suggesting.
Again, a 64 blocks in diameter circular wall from above: It does not look too bad, and from the sides on top of a small hill overlooking the disctrics I think it'd be just awesome! You could also easily make a road around it using the same technique and it would look nice.
Here's a very rough sketch of the layout I'm having in my head:
The lines are main roads surrounding the districts, basically our main transportation.
Again, that is just a rough sketch of the basic concept I have in my mind (with no real detail). My opinions about it is of course just that, my opinions.
I don't know. I'm just finding the whole square layout boring and unimaginative. It would be easier to use squares but I think that's why don't like it. It just seems boring to me.
However, as said, this would be easier and therefore probably the more logical choice.

Actually I have to disagree with you, everything you see on your screen, and I mean everything, even your most advanced game, is made up of little squares. (Pixels are squares. )
But seriously, I think it would feel more like a town if we go with square districts instead of circular. *Shrug*
(Edit: The Pixel reply was meant towards Liquorice)
I really like the hexagon idea, if circle is out of the question. Yeah, the whole world is made out of cubes, but does that mean that we have to make more? Not necessarily. Plus, the hexagon idea looks good with the honey comb idea, which allows us to expand indefinitely.

Alright. what about something like this. I would still like to keep the overall city separated with paths connecting them. This allows for easier expansion. I would also like to create an underground rail system for quick travel as well.

It feels to me like we are trying to shove a circle in a square hole...

What if my circle is smaller than the square hole
Something that relies on circles too much can't really look good with huge squares, unless you make it even bigger. See Enterprise video.
That said, circles wall around the city or just around the core is not so bad. Hexagon or weird shapes would however, probably look like crap.
Fixed that for you :P. That's exactly my point.
