I think we've known about two expansion since before the release of Vanilla. At least I did. Not sure how though.
There was a blizzard timeline posted a while back stating that the D3 expac would follow MoP and then WoW expac then D3 Expac. The only title that was known at the time was Mists of Panderia. Titan was suppose to be around D3 expac 2, but was recently pushed back due to an engine overhaul(?) I think.
It can still be the first expansion, even if it is the only expansion. My english grammar memory could be deceiving me here, but one doesn't necessarily seem to rule out/precule the other?
But yeah, I guess it was pretty much expected for D3 to have at least 2 expansions

We know nothing. But the infamous Blizzard product slate (which I can't repost here because then I would kill a kitten) mentions 2 expansions, which is why everyone's assuming there will be two expansions.
Meaning of the word was given above, just wanna add that WoW vanilla was often used for the classic, non-x-pac version. In D2, it was D2 classic and D2:LoD. I guess/hope they'll use that again in D3. I don't recall ever having read a bluepost referring to classic WoW as "vanilla", I think it's more a term the community came up with (and uses frequently).
Yeah, I don't think it's confirmed outright whether there will be more than one expansion...
My opinion, though, is that they'd be really smart to release more than just one...D1 had 1, D2 had 1...D3 should have at least 2 total, in the long run.

It's not confirmed but I'd put bitcoins on it that there will be more than 1. The product slates have only ever been wrong about release dates, not projects. So until I see change or a logical reason for change I assume things will follow the same course.

D2 was also called Vanilla. I prefer that expression to "classic".
I knew we got more then just one Expansion. Its both cheaper and less timeconsuming to make expansions!

In all seriousness it has been pretty obvious Diablo 3 would milk their customers for several expansions in the future. This isn't new by any means.

Storm of Light is a book, but the description of the book indicates that RoS is the FIRST expansion (which hints that there probably is another).
No one here thinks Storm of Light is an expansion.
