a lot of good ones up here! I would like to second the following:
Darker than Black (loved! dark)
Ghost in the shell (dark)
One Piece (hilarious, dramatic, epic; a good romp)
Full metal Alchamest: Brotherhood (the first 1-2 episodes are worse than the original anime, but the rest makes up for it 10 fold!)
Cowboy Bebop (definitely a classic!)
Avatar (Kind of kiddish but very enjoyable)
I would add Fate Stay/Night
I feel that Bleach was good for a while, then It really let me down at the end of one of the last arcs. Approach with caution

If that made sense to you, Bravo! I think I even confused myself...
I haven't watched bleach, one piece or naruto and I love anime, does that make me a bad?
:whistling:
stuff by jun maeda like angel beats!, or Clannad (if you watch the afterstory and don't cry you're a monster.).
Chrome shelled regios was pretty darn good but lacked explanation that was necessary to find in the manga.
Black Butler was pretty amazing
Zero no Tsukaima for those that like fan service because half the point is the underlying sexual tension.
Other than that I also advise watching the american cartoon Avatar: The last airbender (or the legend of Aang), which is drawn with an anime feel, and is one of the best anime-like-things I've ever watched.
Also on the dub vs jap sub debate, I always watch an anime in japanese with *insert language here* sub, I don't know why really I just somehow feel that it retains more of the original feel. (such as, at one point, Nagisa saying 'me and tomoya are doing ecchi things together!' which got dubbed into 'me and tomoya are having sex!' which is a pretty (to me) important nuance and I like that sort of thing.)

I've watched avatar 2 times so far since last year. IT is hands down my favorite anime. The character depth is enormous, it makes you feel for all of the characters. Very well though out story. MY only problem is it is only like 63 epis.

Not even Death will save you from Diablo Bunny's Cuteness!
The only action anime (man, I hate this word) I ever really really liked was Samurai Champloo. I never understood how underrated it was. The story was great, the tone was part satire and part seriousness. I loved the social commentary in it. I loved the characters and their development. Even the action was superb and never too over the top, yet still had mild doses of the cliches typically found in the genre.
Cowboy Bebop wasn't bad at all, but quite overrated in my opinion. The characters were just all flat and lacked emotion. I didn't understand their true motivations for anything. The ending of the series was very anti-climactic too. I was just kind of depressed by the end of it but it still had some really great moments.
Death Note was really fun. Everyone things the second season sucked because of the death of a major character by then, but I thought it was great till the very end.
Serial Experiments Lain was kind of disturbing and entertaining. Overall I really liked it and the themes in it.
My favorite is probably Haibane Renmei. It's just a great show about sadness and guilt and how life isn't always supposed to be happy. That series I never wanted to end. Even if it just showed each character doing mundane things on and on I could've kept watching it. The music in it is amazing too.
I have never been a fan of anime in general. They're either too childish or too immature.
My only recommendations are classics:
Dragon Ball (what, one has to say it. Dragon Ball AND Dragon Ball Z are absolute classics. You have to get the proper versions, however. There are 2 versions I think with English voices. And one of them just stinks. To know if you have the right one, you just check out the "its over 9000" episode.
DB is ridiculously long, however. Hundreds and hundreds of episodes, many which are sadly not needed.
Avatar: The Last Airbender was mentionned too. Only 61 episodes, 3 seasons. Amazing story, amazing characters, amazing battles. Family show, don't expect blood, but its very entertaining and nothing in its development or depth is childish. Its all very mature at its core.
I felt Nausicaa was mor of a let down. It was the last of them that I saw (although I have not seen My neighbor Totoro) and I felt it was the weakest. Love Howl's Moving Castle though.
Well it's just that when somebody wants to tell someone else about something awesome he doesn't just give you a list and say: "this was good and this too and that anime was great and the other kinda sucked"
I don't feel too strongly about anime in general but yeah when I do recommend certain ones to people I try at least to sell it more.
I'd like to suggest Shigurui. Pretty excellent anime involving a samurai dojo, a deranged master, and lots of gore.
I'm sure most others have been mentioned:
Death Note
Elfen Lied
Gantz
Samurai Champloo
Another one not many people have seen that's really good is Basilisk: The Koga Ninja Scrolls. The story is about the long hatred between two rival clans of ninjas. This isn't for kids though, lots of gore and the character design is really good. A lot of the ninja are almost inhuman, and have varying attacks that are as unique as it gets.

Incidentally, I will check the cartoon Avatar. It seems to have garnered generally positive reviews.
Cowboy Bebop wasn't bad at all, but quite overrated in my opinion. The characters were just all flat and lacked emotion. I didn't understand their true motivations for anything.
