As usual, in the official Bliz announcement, an end date was not specified. Given the history of end dates this time of year (i.e. working around holidays etc) plus the 'belief factor' in Bliz keeping to the '3 month' end date, what do people predict for the final date of Season 7??

Could be just before Blizzcon too. Either way, it's likely they're finishing the season, then announce the new stuff (hopefully) at Blizzcon, then we will see what will be of the game honestly.
If there's a new patch in the works which is not related to Blizzcon, we should have new info in October.
PTR for the next season will be up in less than a month and they also last for about 1 month so the next season content will not be announced at blizzcon obviously since it happens on november 4.
Most likely they'll stick to their schedule of a 3 months season, having S7 end shorty before or after Blizzcon. Maybe even *at* Blizzcon and celebrate a sort-of hype, attempting to get some streamers doing their last season push live at Blizzcon. But also just ending it a day before or the Monday after sounds realistic. PTR would then start the typical 5-6 weeks before, so end of September.
If they announce something big at Blizzcon it will either be on PTR already before that, or for Season 9. I can't think of them waiting with PTR until Blizzcon, as that would prolong S7 to be another 5 months season and then it collides with Christmas again, over which Blizzard has its offices closed (as we saw in the overly long S1 and S4 which they said they wouldn't do anymore). So all other scenarios are not only unlikely but almost impossible (or will lead to straight out disaster). November is just too late in the year to announce something, put it on PTR, and push it to live within the ~6 working weeks left before holiday break. So basically:
* Season 7 will most likely end shortly before, after, or during Blizzcon
* PTR will probably be up around end of September
If there's any Diablo news at Blizzcon, it's 99% not for S8, but way more likely for a "new game" in the franchise. The hype that Blizzard is creating (post-Gamescom tweet, Diablo job openings, absolutely no dev panels/streams in over a year, close to zero player-dev communication besides a few overdue blueposts) points to a new game. And no, it's not a mobile game as the job posting required Direct X experience which isn't for mobile. The job postings also didn't look like D2HD or D3X2, but really something entirely new.
I seriously don't know why you think it's complicated. 3 months and do the math. Holiday season? It's not even conflicting with any holiday. Season 8 isn't either.
Interesting suggestions, guesses and 'protective headwear'. Special credit for 'do the math' immediately followed by 'when Blizz says so'. Always good to get a clear and unwavering answer.
D3 devs probably play some other games too, right? There is a lot of 'borrowing' that appears in-game afterall. Besides Blizzcon, there is Opening Week to consider and dev membership on some team (that used to happen, perhaps it's been outlawed nowdays). Certainly there will be some video watching during OW. So most effective patching will end in mid-Oct. Doesn't sound like a really big score in patch 2.4.2.1, maybe just finally getting all the cosmetics to drop and more zoo members, and a couple legendary tweaks.
On that idea, based on the above info, I say it is Friday Nov 4. It's going to be a Friday, leaves the servers in an 'idle' state while convention 'happenings' can occur and rolls out a tepid patch a couple weeks later. Perhaps mixed in with a last minute patch knifing just to ensure work for awhile longer.
