My favorite change is the Monster Power system. Now Inferno is what it was supposed to be and I can literally farm anywhere without feeling like I'm shooting myself on the foot (I missed you Act 1 :P).
The new shrines are also awesome. Fleeting Shrine made me reconsider swapping all my gear for gear with "pickup radius"
Paragon system, along with the ability to play any act at whatever level I choose.
Double Legendary/Set droprate.
Health globe items now affect potions too (this is a big plus to me because I tend to focus a little too much on HP rather than EHP)
Infernal machine sounds pretty cool even though I have yet to have a key drop.
NV Stack affects chests.
Followers/pets don't attack goblins unless you're really close to them (this was annoying as hell)
Items below lvl 58 no longer drop in Inferno.
Legendaries/Sets beacon of light when they drop is awesome.
Still, one of the best additions was in patch 1.0.4 where various Legendaries had special effects added to them. I purchased Firewalkers pretty quickly after 1.0.4 went live.
The new shrines, Monster Power and more Legendary drops. Prior to patch I hadn't gotten a single set item, since patch I have had 4 drop, 3 of which I can actually use so I can finally upgrade my gear without having to first win the D3 lottery.
i like that diablo drops better items now.. it was soooo disappointing the first time i managed to beat him (with really crappy gear it was hard) i got like 2 blue items.. now he usually drops ilvl63's rares every time..
...& getting your 5 stacks back when returning to a game you were disconnected from.
This does not happen. Yesterday I got disconnected and had to log back in to Diablo 3. I immediately clicked 'Resume' to play again and all my NV stacks were gone. I was out for probably 2 minutes at most. The stacks need to remain on your character for the full 30 minute duration, so if you kill an elite pack and get disconnected, and you can only log back in 25 minutes later, the NV stack should still be there.

I was in the middle of the doing an uber (by myself) and my connection dropped. When it came back I had 0 stacks and my portal was gone
Loving the key wardens, or more diretly a goal to work on while getting paragon, endless grinding isnt my fav thing although shiny item hunt <3
Quite like the monster power system but a shame im not geared to go past 4-5 at a push and i do wardens on mp2.
Probably most of what they added in. Specifically I really enjoy being able to farm where I please and being able to find some decent upgrades somewhere other than just the AH.

I think that only happens in a party. My brother disconnected and rejoined, had 5 stacks still.

It's just a really great patch all around. I've played more Inferno since it came out than I had the whole time since launch.
