I for one am still torn between Demon Hunter and Witch Doctor. You guys have mentioned pros for each of them, and I'll probably start with one and then switch over to the other for any conquests I still need to do.
But between the two, which would be best to start the season with, and why? I don't really care if one can 1-70 15 minutes faster than the other. I'm more interested in which scenario (DH --> WD or WD --> DH) is likely to have an easier, shorter time getting to the stash tab. I want to get this stash tab fast because I have a feeling the player base for season 8 is going to be a barren wasteland by the middle of November.

DH is good all around for both speedfarming and solo push
WD arachyr is only good for group play.
From my own experience, the 350 chest is hands down best suited for the UE DH. In S6, I saw (I believe) Bell Monks clearing the 350 albeit later in the season with relative ease. Arachyr WD set dungeon is the easiest set dungeon of the gifted sets, Nats is a very close 2nd easiest (again, only my opinion). Barb Imortal Kings is also very straight forward and should complete\master in 3-4 tries max.The rest, only my opion, required a bit more effort (looking at you specifically Uliana's) I spend the time between seasons (s7-s8) running all non-completed dungeons with my NS chars., Nats being one of them and I completed with plenty of time left. Arachyr, I mastered with a Plvl 350'ish WD with low-average gear the 2nd run. It's very straight forward and should be able to get over with in 2 possibly 3 runs through max. There are empty areas of the map to leave alone so you can waste a bit of time the first time through. When I mastered the Barb IK back in S6, think was plvl 300-350 when I mastered it. Think only took 3 or fewer runs through. Vyr's, plays closer to the playstyle in the real game than any other dungeon in the game. The Seeker of Light set dungeon was 'ok' to play (not frustrating) however didn't master.
For the 2nd conquest, I had no issue last season getting the gr75 clear completed with the HT WD build. Was approx plvl 600. Took a while to get the Sacred Harvester and even longer for the ancient to roll at Kadala which is essential for the garg build. I expect the same timeline S8, this assuming no major changes rollover from season patch or updates. LGems were all 70'ish so that took a bit of time to roll up, and had about 1/2 the gear ancient and augmented up to the 70's
I cannot comment on the other conquests as I have never managed to master 4 of any class set dungeons, even in NS so Seasonal is out of reach for me. The gr55 clear with 6 sets 'may' be possible if you roll 3 or more characters however gearing and gemming all with be time consuming.
Have never attempted the boss kills in 20 mins either. I have seen guides (here especially) stating that it's very doable solo, may give this a whirl once I get some speed gear accumulated.
Kinda 'wish' the 3x lvl 65 gems and the 45 no set challenges would return however they aren't scheduled so shouldn't dwell.
You may also notice i dwelled on the set dungeons. This is a thron in my side for the journey. They stand very much in the way of progress so they have their own place in where I choose the gifted sets.
I usually see the journey stages divided up as follows:
Level 1-70. If lucky, get pl'ed early on
Get the gifted sets
Master the set dungeon
Finish the timed rifts
Finish the conquests
Finish the conqueror
Enjoy the rest of the season
Roll HC, try for a couple HC conquests, if possible

In S6 the gift set was WotW, I did the IK set dumgeon and ran a LeapQuake, so the gift should be thought of as 'farmer'. Just plan on doing the easy setD, collect stuff while working on the serious bits - there is no need to go chapter by chapter. Bagstones Difficulties shows that is is best to stay in rifts until T2, then come out and blitz the first 3 chapters and then the 4th. Go meta and collect augment gems....

I'm not in it to race against the clock so I'll bring the monk up to 69, then get the Demon hunter up quick to get that set and then work on my WoL and R6 builds again.
You recieve the Haedrigs gift on which ever class hits 70 first and I'd rather have Natalya than Uliana but I like playing the monk in the lead up to it (and both use dex as their primary stat). I find once I get the first 2 pieces there is a bit of a lull patch while working my way towards the rest of the set then it is about trying to progress up the GR's towards my ultimate goal of Raiment/Shenlongs.
If you want to finish guardian as well is DH really the best choice? I almost feel like going WD again, because I know I can at least get dps to lvl in groups and get gem upgrades faster.

Started out as a monk as planned, was going to change to DH for gift but stayed as monk for my favorite SWK WoL build but RNG knew what I was up to and hit me hard. I was not able to complete an entire build until over p400, just refused to give me crucial pieces of different builds including no ring sets or unity until then, even with Uliana the seasonal monk set I still don't have the fist of az and I'm now heading towards p600.
I've just levelled up a Barb with the ik set so I'll master the set dungeon with him as it is so unbelievably easy and I'm only doing it for the stash tab, but I'm spending all my time on WoL and shenlong's inna/R6.

Been testing Barb with the IK-BK-WW build and I forgot just how fast it is for farming T10-T12. Been doing rifts in 1.5 to 3 minutes based on density.

i wonder if its random that they start the new season the same day as civ 6 and battlefield 1 are launched.

Thats not how the gift works. If you get the gift on monk and open it on the demon hunter, it will be the demon hunter items
I stand corrected, although I'd still have to level up my DH to 70

I played HC WD last season (started an died with HT Garg and ended with Jade)
I struggeled between Barb and DH this time, so my daughter picked DH unsighted out of a box
