I can't think of any games that really gave me trouble on N64 and PS2 aside from maybe some fighting games at max difficulty.

I'd say this is more a matter of perspective. With the internet, we can through forums and youtube suddenly track every possible game achievment out there, while such wasn't possible in the past. As the gamer crowd expands, there is also a whole lot more gamers to pick from when seeing who can beat a game. And if one beats it, everyone can see it, and the "magic" of the difficulty disappears. A little.
PlugY for Diablo II allows you to reset skills and stats, transfer items between characters in singleplayer, obtain all ladder runewords and do all Uberquests while offline. It is the only way to do all of the above. Please use it.

I used to play Ghosts and Goblins at the arcade. Tough game and enjoyable. I think I played on NES or was it on C64 or was it on the PC. I do not remember since it was a long time ago when I played it last. I still preferred the arcade machine version. I do not recall if I ever beaten the arcade version of it.

Many of the old games were first introduced in the Arcades. The owner of the arcades did not want easy games since it would hurt their revenue. They wanted games that did not last too long for a single quarter. Most arcade games were a quarter at the time. Some games were 1 dollar (higher graphics such as Dragons Lair and Space Ace).

Majora's Mask is WAY harder to complete 100% without a strategy guide then OoT
I would say as an entire game I agree. But, the hardest thing in comparison to both games to complete without a strategy guide is def. the water temple from OoT, hands down.

It is a free download on PC and it was made by a guy who wanted to make a game that reminisced of the old nintendo games that were very very hard. Well, I've played those games and I've played (not beaten) this game and I will say that it is by far the hardest game out there.

Ninja Gaiden I, II and III hardest games on the NES.. Need Proof?? Check This
I've played all 3 and I gotta say that the AVGN is right when it comes to these games. They are all freaking crazy hard. I've beaten a lot of the other "hardest" games on a multitude of systems and I couldn't beat any of the 3 original Ninja Gaiden games for NES. I got closest on the second one, which the AVGN just beat last week (after 20+ years of off and on play). The first one is just insane, and the third one is downright impossible because you get game over.
On a side note- TMNT for NES is tough, Battle Toads for SNES is tough also and both are great games and really fun. Castlevania 1 is a great NES game and also really hard.

lol. Try Zelda: Majoras Mask for the N64. Pretty good game. It's difficult because you have to keep reversing time and doing things over, I got to the Zoa's and got stuck so I stopped playing.
I loved Shadow of the Colossus for the PS2. Was a good game. Just you, your horse, your sword and bow, and 16 very large bosses.
I also loved Heroes of Might and Magic: The quest of the Dragon bone staff, something like that. It was a good game and I gad always been a fan of Heroes of Might and Magic. Actually, just talking about it making me want to play it.

Any game from the Metal Gear Solid series on the hardest difficulty is pretty darn tough and wow, what a great series too. I've played every one on all difficulties many times through.
Modern Warfare on the hardest difficulty.
Try beating it in one go, I dare you.
The only mission I find hard is the 2nd last co-op challenge. Waves of juggernauts grenade launchers, and missile launchers etc I still can't beat it in hardest difficulty.
