So my current setup is 4 Inna, 4 SWK, Gungo, Crudest Boots, Torch. I'm on PS4 so I can't link my profile. I'm going with EP-Impending Doom with WoL-Pillar to detonate and Sweeping Wind for extra damage. I screwed up by not rolling 7% RCR out of my ammy so Sweeping Wind is not helping me keep Taeguk going. Instead I'm running Bane of the Powerful, Trapped and Gizzard. The setup mows through Grifts with ease when it's groups but I'm hitting a wall in the high 30s, not due to dying, but due to how long it takes to kill the RG. What's the best application of the above abilities to do the most single target damage. EP spam? WoL spam? Some combination of the two? Spirit isn't an issue between Epiphany and Ariel Servant.

Impending doom only does damage when the enemy dies, so on a Rift Guardian it will not help directly (it will help if there are add mobs around that die and blow up). WoL-Pillar won't "detonate" EP as far as I know. EP-The Flesh Is Weak might be better for DPS on the RG since mobs take 20% additional damage. Spamming WoL will increase damage due to the clones that spawn from the SWK set.
Unfortunate that you have over 7% RCR since it's impossible to use SW to keep up Taeguk, maybe replace the ammy asap?
That's exactly what I got going and my wall is 39. I just spam Pillar all day on the RG but it takes forever. I don't have infinite epiphany but the cd is low enough that between it and Air Ally I can spam it constantly. I have +WoL damage fairly high as well. So WoL Pillar is really Monk's best single target huh? I guess I just need to find some gear upgrades.
You basically just have to rift fish for the right guardian. Any that spawn adds are pretty good, as you can use them to EP explode for large chunks of the guardians health. The other thing is pylons. Getting a Power pylon to increase damage AND getting a RG that spawns adds for power pylon EP, is basically the strat after a certain point.
Maybe you waste too much time on trash mobs? With basic torch build and having rorg with unity as rings you shouldnt see the cap on under 40,ish rifts.
I dont mean to offend at all, think that might be the reason even if you have too much rcr.
Before i had the same problem due to too much rcr since i was stupid enough to not roll off 8% rcr from my shoulders and my cap were 44 and now 48
in season 1 I did GR42 without a torch, just with 4sunwuko, 4innas and an ancient flying dragon (which drained my resources even more). just spam WoL and make sure you have some form of elite, elemental and skill damage on your gear to push it
Sukmakok: the datamined info is only showing the changes. As they don't mention anything for the 3 and 4 set bonus, I would assume they stay (so you keep the 4 mantra's). They might remove the 3 set bonus, so it has 3 set bonusses, like all 6 piece sets, but mantra is the 4 piece anyway.
Sunwuko gets Chest and Pants, 6 part bonus yet unknown (afraid it will move 500% damage from 4 set bonus to 6 part). Or if 6 part bonus will become something ubergood, SWK 6 part + Inna 4 part bonus will still be OP (wouldn't 50% resource cost reduction for 6 piece SWK be something wonderful?):

Monk's only single target damage is WOL pillar spam which requires torch, sunwuko's, and either innas+sweeping setup or infinite epiph.

There is no secret to it, just spam WOL. Maybe if you get a better ammy, Taeguk would springboard you.
