I'm struggling to match some basic levels for armor (6k), resists (750), health (27k), damage reduction (75%) and I'm still doing 1400 LoH at 1.6 AS --- but between DEX at only 2100 and a weapon with 650 DPS, I can't get my DPS above 15K. I could be wrong, but I calculate the 'soft cap' for DEX at about 2900 without getting into the STAR level gems (about 2600 max for gear, weapon, shield, and 9 gem slots @ 35-40). Even at that dexterity, it would require a 900-1000 DPS weapon.
Is there something wrong with my logic or with my expectations of DPS?
I assume your playing a monk. since you didn't really clarify, but it seems to me your problem is that you have too much AS in your gear where you should have crit strike damage. I have a DH with only 7% AS, stacking crit strike damage and Dex as much as possible, and my damage is at 90k. Since they nerfed AS it is a stat that you should probably not stack until they get it straight in a future patch. Start replaceing AS with crit strike damage and see what happens.

I have 300 LoH (star amethyst), but yeah, a very slow attack speed. Mainly I've got a lot of defensive stats so I don't take the damage in the first place. Also a lot of avoiding damage, haha.
It's not optimal, but the high DPS means I kill stuff before it can kill me. Usually. For reference, I've cleared Act 2 and am farming both that and Act 1 for a while before I get into Act 3. Ideally I'd have a one hander and a shield, but I take what I can get.
With that much dex jumping up to a 850 dps weapon, which are fairly cheap, will be a huge upgrade. Basically 21*200 or 4200 damage minimum give or take a little depending on how much dex you lose on new weapon. If you have a bunch of crit or attack speed on gear it could be even more.
Personally I found 20k before the 15% before breath is plenty for even act iv, though I'd never turn down more.
attack speed, crit chance, and crit damage all increase your damage immensely if you have none. AS obviously isn't as good a boost in dps anymore but having like 20-30 percent crit chance and 200+ crit damage with decent dex there you go you will have 30k dps.
Thanks so very much guys! I appreciate the thoughtful responses. I'm on a campaign to balance my gear by adding more crit and replacing my weapons/shield. I admit I paid little attention to crit in my quest to achieve higher LoH --- somewhere in between, for my play style and satisfaction, is the answer.
I recently bought a helmet with 700 ish armor, Dex, vital, 50 psn resist, 1 socket and increases fists of thunder damage by 12% but lost 50 Aglilty and some resist.
Took a chance and bought it for 5m and I would have paid double or more.
(I only wished it had crit chance but that would have been probably over my budget)
Although it's a "hidden dmg" don't take this stat lightly.
Got rid of my Helm of Command with dex, vital, crit chance, armor and socket and I won't be going back.
Also "downgraded" from 980 dps weapon to 760 dps weapon with 60% crit, 200 dex, 3.0% Life steal, 26 life per spirit gained + elite dmg and my monk melt almost anything on his path.
I farm act 3/4 quite easily without skipping anything (although there are some elites that still give me trouble - desecrate, shield, laser and arcane )
I think I achieved a good set of stats thanks to all your help. I now have 28K DPS (32K with BoH), 795 Resist, 1089 LoH, 1871 Dex ... but only 24.5K HP. I have 7 @ 42 DEX gems on my gear, and am thinking about swapping out 4 of them for 42 VIT ... that would adjust my DEX to about 1700 and my HP to 30K. Thoughts?
I'd say about 15,000,000 in the last month since I turned 60. I have never, ever, zero, ever had anything drop that I could actually wear myself. But in A1/A2 Inferno I have raised about half that amount from XP and rares, and the other half was selling stuff I was already wearing when I made the original post. I had a strategy that really worked well for saving money. I never searched for the highest level of any stat on an item --- I had the goal of how much total Dex, LoH, Resists, Crit Chance (25%) and Crit Damage (200%), and then divided those amounts proportionately amongst the gear that I'd search for. That way when others were paying gazillions for rings with 4.5 Crit Chance, I was happy with 3.0. I'd aim for 40, 50 and 60 All Resists rather than 80..As I sold more rares, I'd look for the weakest gear and replace it and sell it at a profit. I've spent about 1/3 of my time in the AH and charting gear.

Why are you saying this like it's an issue? Is it not reasonable to have to use at least a low-mid grade weapon to play inferno? I mean I'm checking the AH as i make this post and there's a 919dps onehander for 90k buyout... I could not be further from understanding the problem here.
Sorry, you are looking at only half the supposition. The point I was making was that (before I realized how much crit chance and damage contributed to DPS) it would take 2900 DEX AND a 900-1000 weapon to reach 28K. I was skeptical because I couldn't conceive of anyone have 2900 DEX, not because a 900 DPS weapon would be out of reach.
