I almost never see anyone saying this but... The easiest way to defeat mortar is by running sideways. They're thrown in a straight line - it's a lot harder to judge the distance they're going, than the direction. Especially if you have someone to tank, just move in a circle around your target. See the following for a funny example of this concept
I tried him about 20 times the other night, trying out all but the last LoH strat, where you tank 'n spank him. Here are my stats:
21k dps
300-350 all resist
48k hp
24% crit
Here's the thing - I haven't used the AH (any form) since I got to Inferno. I realize that I could go buy 2x 1h w/ LoH and probably do it, but I'm looking for alternate suggestions. If I try to spread the poison slowly, his minions eat me alive (my low dps means I don't kill them quickly enough). I guess I can keep farming 'til I find an xbow with LoH...
Maybe I die more as glass cannon (still working to update gear with minimal dps loss), but it takes me about 1/10th the time it takes someone like you geared to kill an elite pack. Time is money friend. I can kill more trash and move onto the next pack. I can't stomach only putting out 17k DPS, and that damage is probably less if you are kiting to any degree. Especially with elite enraging and bosses enraging??? I actually got a reflect damage illusionist succubus to enrage yesterday somehow.
I hear you, I just don't like to die... ever. I didn't hit any enrage timers yesterday, at least. I cleared probably 2-3 dozen packs.
[edit] I should also note, I haven't used AH since I hit inferno, which is just part of how I'm enjoying the game. The lack of a solid weapon drop (using a 600dps bow atm) kinda limits me a little [/edit]
55k hp, 17k dmg, 300 all resists (200 resists when I run my 186% magic find gear).
Repair costs make glass-cannon less effective, flat-out. Sidenote: rapid fire makes No sense for a glass cannon, as you can't afford to take any hits...
I stopped using the AH when I got to inferno, and I'm able to clear pretty easily into Act 3 with the above gear/setup.
If you're gearing tanky (which isn't bad), it just means you need to play smart. Permaslow builds like the one above are going to go a long way for you, as because your damage is so low, it means you won't have to kite as far back (stuff moves slower...).
I'll also just add, make sure you're using the terrain to your advantage. Clear our circular/square areas in dungeons so you can bring elite packs back to them for the forever kite + return to health globes.
I'm running a defensive gear setup (300 resists, 55k hp), and I have only have 17k damage. I don't really get the glass cannon kids - a little defensive gear and you're able to fight longer, and do more than "Ahhhhhh run away run away!!!!" The DH playstyle doesn't change with defensive stats - you still have to avoid, but it gives you a little wiggle room to get back to those health globes...
I'll also add some generic anti-waller advice: You will notice that there are times not all of the wall goes down, only parts of it. Out in the fields, you'll get fully encased so all you can do is stay far away. The best thing to do indoors is ALWAYS stand about 2-3 yards from a wall - this will negate the minion's ability to create the wall there, always allowing you a path out.
It will be viable as long as you have discipline left. I recommend getting some +max disc gear, as without it your skills won't matter. Frost Arrow is pretty solid damage, especially with cull of the weak, and assists you in staying far away from them. Glass cannon works fine on trash, but when you hit a hard pack you're going to have a rough time unless you can burn them instantly (i.e. 50mil worth of gear).
I'll also add, playing "defensive" doesn't mean the playstyle changes. Demon hunters take 30% more damage than barbs/monks, so we'll always have to run and avoid. So far, being able to absorb a hit really allows you more options as far as WHERE you run (i.e. You have much greater potential to fight in small spaces with defensive stats).
[edit] I dropped caltrops in inferno, because it costs so much discipline. A single cast of entangling shot/chain gang has a wider spread of slow, so it doesn't require them to be pathing in a linear fashion. [/edit]
Killing the invul packs is mostly about staying out of reach, and Vault is the key to this. When they DO get to you, shadow power lasts longer than smoke screen. I've also found that finding random trash to kill w/ the lifesteal is a nice way to bring yourself back up.
Last thing, try to prep the zones you run through - I cannot stress this enough. Find a square or a circle, where you can endlessly kite, and yet it'll bring you back to any health globes that drop. There are times we cannot control the terrain we fight in, but if we can, it's stupid not to.
PS Find some gear with +max discipline on it - I've got +20 (50 max). It makes a difference.

I stopped using the AH when I got to inferno, so I'm sitting at about 300 all resists, 55k hp, with 17k damage.

I did an act 1 clear last night in about 2 hours, picked up a lot of great stuff. This is what I'm using:
