1. I'm trying to socket my necklace and rings for legendary gems, but every time I do, my DPS suffers. It does not seem to matter which property I pick, DPS always suffers. Is there a certain trick or something to keep the green arrows in the stats?
2. Is it possible to change the DPS arrows to green? I have a necklace (unsocketed) that I want to wear, but it has 3 red DPS arrows. I'd really be grateful if anyone can help.
When you roll away a DPS stat for a socket on jewelry your "sheet" dps will drop but the your "effective" dps will be increased in most cases by using the right leg gems. The colored arrows only take into account simple sheet dps stats (primary/CC/CD/IAS/Avg.DMG etc.) other stats like elemental damage, skill damage, elite damage and the potential value of sockets aren't measured by those indicators. To make matters worse attackspeed will always show as a DPS increase on your sheet but many builds don't really benefit from it. Focus on the stats on the jewellry and not the arrows. You can fairly safely assume that sockets are always worth it, roll the worst stat off of your rings and amulets for sockets and you will almost always come out ahead.
That's what I figured, that is, to roll the worst stat off for a socket, but 90% of the time the worst one I pick does not have sockets in the "view possible replacements" window. I usually always have to roll off a higher stat to get a socket, and that's where I think my DPS is hurting.
The worst stats are always at the bottom of the items property list, correct?
BTW, what are the "right leg gems?" Maybe noobish..lol, but just asking:)
Ah, OK. So seeing as how I will have to sacrifice a primary stat, is there one I can select that won't bring my DPS down, like a least important primary?
Best amu have elemental% (the one you use the most), high crit chance and crit damage, socket.
Since those are hard to get, many settle with mainstat, cc, cd, socket.
The flavor of time is an amulet that can come with a 5th primary, making it the highest potential sheet dps amulet (ele%,cc,cd,main,socket), but since it always come with movement speed, it is hard to have a good one.
Also, legendary affixes can outperform it (if not dps, there are immunity amulets, hellfire amu with an aditional passive, or just good procs)

There are primary and secondary stats on items, top rows vs bottom rows. Sockets are always a primary stat.
So Int, vitality, % life, critical hit chance, attack speed etc are primaries and exp per kill, gold pick up radius or cold resist are secondaries.
"right legendary gems" change from build to build and on a good day are contentiously debated...
