2handers are for builds that don't rely so much on attack speed.While the upcoming change to 2h will make the DPS go up, and make everyone cheer, what it also means is that it will further improve their role in skills that do not consider attack speed. Because right now, there's a very small difference between using a 2h and a 1h with skills like Overpower and Rend, like 200 more base damage, which isn't that much, and for many is not worth the trade off.

Doesn't make sense that a faster 800 dps weapon hits for less than a slow 800 dps weapon, unless it averages to the same thing?

Isn't dps already an average? 800dps 2H = 800 dps 1H. The only difference is how often and how hard the abilities hit. Either way, you're still getting 800 dps. The benefit that a lot of people get from 1H's is that resources build faster than with a 1H due to their higher attack speed.
When a skill says "does 300% weapon damage", what is used in that calculation? Your "damage" paper doll stat takes into consideration things like crit chance and crit damage, which I would imagine the skill damage does not (those are applied only if the crit occurs).

So do this mean that the dps of the weapon shown is the min-max range calculated with the weapon's affixes? IE, a blue sword with an affix of +8% attack speed, is this calculated and displayed as its dps in game?

The DPS on the weapon itself is only an average of its min and max damage multiplied by its attacks per second. You can verify this pretty easily by doing the math for any item. Other affixes like +% weapon speed go into your character paper doll damage stat.

Weapon damage is not the same as "character sheet damage" which means "weapon damage" does not factor in crit chance, crit damage, or attacks/sec.
