I don't have Tasker and Theo or Furnace. I am not sure what is best for a Mammoth + Apocalypse wizard. Even if Mammoth Hydra doesn't get IAS, is it worth taking Maxiums and lose: 22% fire, 23% elite / x2 Hydra + some int. etc.?
I would really appreciate some help regard what to pick.

That's tricky. Did you test it on Ghom/Butcher? I can't say anything about Mammoth Hydra (imo, this spell is clunky and Blazing Hydra seems to be stronger vs bosses anyway). I only know that for Blazing Hydra SS outperforms Maximus hands down, unless you get the most out of the fire chain.
I personally found that using a Maximus isn't worth it if you have a good Serpent's Sparker or Sunkeeper. The reason why The Furnace is so good is due to the elite damage and high base damage from the lower base attack speed (1 attacks per second). Due to Maximus being a sword it has a higher base attack speed (1.15 attacks per second). As you've already pointed out you lose a lot from switching from one-hander to a two-hander. The Furnace makes up for it with the elite damage and low base attack speed.
I did a few tests on Ghom with my Maximus, Sunkeepr and Serpent's Sparker. The Sunkeeper beat them all. Obviously Ghom is an elite so the elite damage on the Sunkeeper helps a lot. I think in high greater rifts where the white monsters have a lot of health it might be better to use the Maximus for overall dps, but I haven't really been able to test. I still prefer my Sunkeeper. It's a godly roll which helps, which yours is as well (mine's 30% elite, slightly less higher top end). It's a tough choice but I like the Sunkeeper magefist/firebird eye combo.
So I'm pretty much in the exact same position as this fellow Wizard, and your saying the SS outperforms them both?
Not exactly. I only tested SS vs Maximus, since I don't have a decent Sunkeeper. Also, I was only talking about Blazing Hydra builds. For Mammoth Hydra results could be a bit different, since IAS would be pretty much irrelevant.
Yeah, it is hard to pick. I've tested all in rift 33-34 and found to my suprice that Maximus was pretty decent. I want to use the Mammoth hydra due to massive pullings in Greater Rifts. The problem is always the last boss for the Firebird Wiz thou.
They all have pro and cons, but overall it seems that you should play with whatever you enjoy. SS is fun, but sometimes you forgot to put the extra hydra and need to keep track (maybe spam one too many) etc.
I am still testing around with setups, but for now I am using Maximus for Greater Rift and Sun Keeper for T6 farming. For boss farming Blazing Hydra with SS would be the top pick.
...ooh! I just put on all my fancy gear on for teh lolz and went Rank #1 Elemental Elite Damage (Chain boots & pants is prolly better). Think I rerolled offhand around 40-50 times with no luck for elite dmg. So useless, but still fun

The funny thing is that with my current gear (20% IAS) Blazing is stronger than Mammoth literally in every situation, even when Mammoth Hydra has 100% DPS uptime, which is usually not the case in lvl 30+ GRifts due to constant kiting. More importantly, the difference will become even more significant once I max IAS via paragon points and get IAS on SS (which is another +16% IAS total).
Otinane38, that gear on diabloprogress is not what I run in rifts. I got around 18-19m tough and full firebird. The Demonic Slave is nice in 30+ rift, and that is also one of the reasons I use it for the Greater Rift.
