2h is better if you are going for some form of high damage crit build with lots of crit damage gear. Something that is ultimately very expensive unless you get lucky drops. With a 2h build you will attack slower but hit much harder so life steal becomes a mild possibility. Although a proper 2h build should not need life steal or any lifegain abilities because technically you should blow stuff up before it even reaches you and sometimes before it even knows you are there. My wizard is using a 1200 damage staff with 156int, 43% crit damage, socket for more crit damage along with +2800ish life on kill. My build is centered on arcane orb, hydra, blizzard and I can full clear inferno A1 in less than an hour. It's quite entertaining being able to hit 300k crits with arcane orb/obliteration.
On the other hand you have the fast attacking 1h+oh build. This is pretty strong and a lot of people swear by it. This build is designed for fast attacks that don't hit as hard as a 2h build. A lot of people will still use arcane orb, hydra, blizzard and such. One perk of this build is that it can be rather tanky. OHs are awesome witht he +dmg but you can also go with a high int and crit shield. I have a friend running around with a 180ish int shield (socket) with 10% crit, 20% MF, +block and +armor. Yes, 2 perfect rolls on one shield, he won;t tell me what he paid for it ont he AH though. He uses electrocute/chainlightning and annihilates packs of mobs in seconds, even elite packs. With the faster attacking 1h builds you can also use LoH to great effectiveness. Energy Armor/Force Armor with LoH is a lot of fun if you manage to get a really fast mainhand with LoH and a socket besides. My friend runs around with a 800 damage dagger with a total of around 1300 LoH and 3% lifesteal, he walks through inferno A4 easily, or so he tells me.

Totally agree with the DPS calculator. However I think blizzard does NOT normalize your weapon damage and attack speed. I believe it is only based on your weapon damage thus using a 1h means your blizzard does not tic as much as an equal dps build using a slow 2h. Because of that I only really like blizzard with a 2h build, though I use a 2h and I just use arcane orb and arcane hydra with slowing passive to kite over blizzard.
Like others have said, 2h is much cheaper but either is perfectly viable for the standard kite specs to clear Inferno. 1h+shield is essentially required for melee/tanking build.
But im unsure if I should go 2h or 1h+OH? What is the difference of the playstyle / performance of those two?
1h- faster shots, lower damage
2h better for blizzard/hydra/more dmg
1h better for arcane orb/hydra/life on hit
