I have played beta for quite some time probly 10+ hours on each class, with gear, without gear. Many skeleton king runs with MF testing many things. This is just my thoughts on classes, random thoughts on what I will be doing, thinking about when making my launch char and beyound. Most of this is also based on just owning to level 13 couple times and trying to max gear. Most my first few clears were solo, then I started doing co-op runs. Only played with a few RL friends who I planned on leveling with on open beta. Glad they got to play some though.
Barbarian: I was gonna play this probly 90% on launch anyways, but I will say its fun running around no gear, with gear. I was very pleased owning barrels even. Very interactive. 2her, DW, or even Sword and board. All fun. With all str gear skeleton runs were just ownage running around like madness.
Monk: I'm just gonna say I had pretty much as much fun as I did on Barbarian. Started out little slower, but with gear and badass fist weapons even to start I was having fun.
Demon Hunter: My favorite range class so far. Maybe because 2 crossbows and 17 dps and rapid fire just owned everything was like wow, stuff died fast. Seems little machine gunish though lol. Without gear though it was still ok.
Wizard: Started out a little slow. I kinda liked it but the blue lazer kinda felt like cyclops from x-men everytime I held shift and just circled around with it lol. I can see this class being very overpowered endgame anyways.
Witch Doctor: This omg weakest damage by far I thought. Until u get awesome weapon and skills. Leveling this over and over in beta was just like to me like dam this sucks. Even after I watched the WD video, I tried to play it again. OK this is gonna be different. End game looks awesome. But first 13 levels was to slow for my taste. If I went WD at first and got the worst luck on gear in the first 20 levels like, no int crafting stuff, 3 other friends got zero int drops to trade me , except for my boss drops. I'd feel in bad shape in wanting to play more. Still I know it will be fun later.
I'll only comment on the WD portion of the post here, expressing my own experiences with the class.
Of all the classes, I feel the variety of 'fun' with his abilities varies the most. I absolutely despise Corpse Spiders and Plague of Toads. I don't like the idea of not having direct control of my 'primary' attack. Whenever I use these abilities in the beta, I get a similar feeling to what you're describing in your post. The character feels weak and things feel slow.
However, all the other abilities of the WD are fantastic IMO.
Poison dart feels very powerful and runed is even better.
Grasp of the Dead is an amazing AoE with great damage and utility. Another thing I really like about GotD is the fact I can toss it down then continue to own face with my darts.
Firebats feel good for nice damage, but in the beta burn mana a bit too quickly for my tastes. I know some people swear by it but I usually opt for Grasp of the Dead instead.
The zombie dogs feel a tad weak but function as excellent decoys. Rabid dogs does help a tiny bit.
Soul Harvest, ZOMG damage boost is amazing!
Sacrifice, I never really use it. Most things in the beta die too quickly to warrant having it on my bar.
Also, the few WD passives we have access too are fantastic. 20% damage reduction for you and dogs? Increased mana and mana regen? Getting Zombie Dogs without needing it on my bar? All great passives.
It took me a while with a few runs with my WD, but after I weeded out the abilities I felt were weak and unreliable, I started having a lot more fun with him.

I played the Open Beta first with the Barbarian, and while I had some extreme fun with the character, she wasn't was I expected, and only done the Skeleton King once before changing to the Wizard.
Which, I will say, was awsome, and even that description doesn't fully cover my experience with the Wizard. Her sheer arrogance in combat is a breath of fresh air. The Wizard will most defintely be my first character choice at release.
And my third Open Beta character was the Witch Doctor, which admitedly I played only to see what people are complaining about. And I don't understand why people are complaining! I had tons of fun with the Witch Doctor, far more than expected. The Witch Doctor will be my second character choice at released.

Ironically enough, most people was complaining that the Witch Doctor is a rubbish class. But as can clearly be seen, when I played the Witch Doctor, she ended up being the most powerful [in DPS] of my three characters.
As a result, this will be my character choices at release:

I personally love the WD. I feel of all the characters that the WD has the widest variety of tools in their arsenal. You have ranged attacks, great aoe, excellent control abilities, pets, amazing survivability and fantastic group utility. It's just, I didn't care for the Corpse Spiders and Plague of Toads abilities.
Whenever I would use either the spiders or toads, I felt things slowed to a snail's pace. The spiders ai leaves something to be desired because they'll chase moving targets and often times not attack more than once (and contrary to what some people post, they don't provide collision. Monsters freely walk right through them, I've tested very thoroughly)
The toads seem even more unreliable. Even at close range, it they felt weak. Often times I'd only have one toad (and sometimes 0 toads) explode on a given target, netting me a measly 130% weapon damage vs Splinter's 180%. The toads just roam randomly, many exploding without ever making contact with a monster and some even spawning behind my WD and wandering completely the wrong way.
Perhaps I just use those abilities incorrectly but as long as I stay away from them, I have an absolute blast with my WD. Tossing darts, slowing/aoe'n monsters, stealing Intellect and summoning dogs to fight for me! With the mana regen passive, Fire Bats becomes an extremely reliable and devastating damage source as well, it's just by the time you have access to it, the beta content is obsolete.
WD will be my first class come retail. Can't wait.

My thoughts on classes from the open beta:
Wizard: found the class the be really fun and have great aoe damage once they get a little gear, the control seems pretty nice with slows and snares they just seem to lack the mobility of other glasses but that will probably be resolved with teleport.
WD: another fun class to play but a bit too clunk feeling for my liking although having the dogs run around tanking was pretty neat.
DH: Super fun with great mobility, i loved being able to do the roll and get a short sprint afterwards,the resource system felt really nice as well with hatred for offence and discipline for defence.
Barb: didnt really like barb but thats because im not a fan of melee classes, it was fun leaping around an cleaving packs of monsters though.
Monk: again not a huge fan because of them being melee and the healing, while im sure will be very useful as the game gets harder, was pretty useless in beta as there was no need for it.
Ok- Ive had the beta for months- played mostly HC from when it came out... didnt make much diff really as beta v easy...
Anyway
WD- I like him a bit better recently- I think the critter he gets at about lvl 19 in the reveal this week makes him look more interesting as time goes on- didint like toads n spiders in beta much- will play it up to 20 and see what happen- but not a main toon
Barb- love this one- tempted to make it a main- I love the rag doll effect of belting mobs across the screen and out of the park... a fully nuts class- will definately be my main HC at this stage
Monk- fun and surprised how much i liked him- i wonder how vital a monk may be end game and perhaps arena with his heals? I think my #2 HC and possibly even #2 norm. character
DH- i like it - it does feel a bit machine gun like - the traps and vaults r great for crowd control and looks to be a great class if u like kiting and owning- will play it but will probably be down my list
Wizz- was always gunna be my main in normal mode- played a sorcerer in D2 as main and am happy to have a tougher time in early game (or more likely mid game) to be the glass cannon in end game grps- I hope the teleport functionality (esp runed) is as enjoyable as D2 tho I realise it has been nerfed a bit.
Have always liked ranged dps. Wizz wins overall with Barb/Monk in HC Will muck about with DH & WD.
I was just saying for WD just mostly the first 9-10 levels are super slow compared the others, but with runes gotd and dogs, soul harvest stacks yes they do own pretty hard. Doing over and over with MF gear to kill SK for loot was just ugh lol. But yes WD I do see being super fun
