I had a similar problem in the past and I found the best way to solve it was to bring up the task manager, got to processes, right click on Diablo III.exe, set priority. Setting the priority to High or Real Time should prevent it from minimizing randomly, as long as it's higher than your other processes, although it may also prevent you from bringing up other windows if you want to also.
Resists a bit low as other said, and dual wielding is always a lot more dangerous that 1h/shield as you have much less armor and no block. The extra DPS attack spead and life on hit is always nice, and will let you kill things better, but when you get walled or jailed away from the mobs and can no longer life on hit your way up, you might find yourself dead with no shield for the extra 25% armor. HC is far more about survivability than dps, and losing that 15% dps for the survivability of a shield might just keep you alive
Your will start seeing very small amounts of resists on lv54 gear, and won't get gear with meaningfull amounts of resists until lv57 gear. And for a monk you should first pick up a specific resist on all your pieces to work with the 'one with everything' passive first it will literally save you 10s of millions of gold.
