I'm looking at making a season character for S4, and from what I've seen of the Season Journey, the one requirement that really strikes me as worth planning towards is the one in Guardian (the last tier) where you have to beat a Torment 10 rift in 2 minutes. I know it'll be doable eventually if you grind at it, and I know it'd be easier in a group - but I'm pretty much just a solo player. So: in your views, which class would you pick to get the best earliest chance at a 2-minute TX?
I don't think you need a particular class for that. Please don't pick a class simply because of one achievement. You won't get this quicker on class X just because it has different spells or mechanics - the way to get this is to find a large goblin pack within the first 2 minutes of a rift, or an open map (Cemetery, Silver Spire, Blood Marsh, Weeping Hollow, Fields of Misery, Festering Woods, and so on) with high progress mobs (Unburied, Dust Eater, ...). A few pylons might help (Conduit like Tom said, or just a Power or Channeling depending on the spec you're playing). And if it's really that just one achievement that's missing after weeks and weeks of farming just join a few public groups and you'll get it pretty quickly.
If you don't want to group up but put this constraint ("only solo") on yourself, than why not also stick to the class you enjoy the most and make it your agenda to try to clear a T10 rift in less than 2 minutes on that class solo. There's no point in picking a class you don't like and stick with it for the entire season just to speed up ONE achievement.
Note that everyone's focused on barbs and monks because that's what everyone's been running on PTR, and people forget about the other 4 classes. It has often been that way, and I can't recall that PTR insights *ever* held up for more than a few days on live. I'm 99% sure that the perception what the strongest class for any activity and difficulty - be it bounties, TX, solo GRs, or 2/3/4 player group meta - will change constantly in the first few days of the patch. And only on the last few days it will be revealed what really are the strongest classes.
You don't believe me? Well, the top players have played thousands of hours this patch, held everything as a secret, even yesterday certain top clans were doing their trials and runs "off stream" due to certain secrets. After 4 months of this patch, only a few days ago many people realized that rift guardians have 10% less HP in a GR if the game is in normal mode, that double melee wizard offers the highest DPS in 4 player groups, and there are still things that are not publicly known yet. Stick with what you like, test your own stuff, and you might find something that no one else found. If not, at least you had fun playing the game, rather than copying someone else's "winning strategy" which turned out to be pretty weak (in comparison) in the end.
Well, I agree with all that Bagstone said - however, what I proposed, due to mechanics might have the best damage output.
Also, if Blizz didn't change that, I got the 2 min achievement, while joining a public group that was just at that moment killing the guardian and they closed it right after that.
I should probably point out that I like all the classes - I probably played with my Barb most overall non-season, and took a HC WD and a HC Monk through the last two seasons.
I appreciate greatly the wise words, Bagstone, and will probably pick one of my least played classes (which would be Wizard or Demon Hunter) to take through for the goal.

not entirely accurate, with the progression changes made to all monster types, it is actually more beneficial on some maps to get some of the weaker monsters with a high density and not look for the old skool zombie rifts.
i fully agree with the rest of your post in regards to picking a class the OP is good with and not just being one of the many sheep, also it is worth noting, this achievement is almost impossible with some classes due to the fact they have no way to move fast enough (wizard/crusader as examples, even with aether walker it is not possible to clear in the time allowed due to resource problems and the CC changes).

Charge+IK barb, or Raiment monk, best on a graveyard tile + Conduit
