Really? U6 monk? Wow, that's great news (I'm the designated monk in our group). Gonna test that over the weekend. I was assuming that as soon as I have the set I'm gonna farm for another set (probably SWK as I love the bell monk, or maybe 1000 Storms as I used to love the dash monk but not sure if it's still as powerful).
But yes, UE DH everywhere. UE is just insane. I don't even like DH but I have to admit... it's just insane for the early farming and those speed tasks.
@Cyberdoc: All classes can get you there; as I said, no class set is particularly awesome of awful, and every class can solo the entire Season Journey. It's more important that you play a class you're enjoying, as you need to stay motivated through the grind. More important than the right class, in my opinion, is to group up - especially for gear sharing. Again, you can farm 8 sets solo... but it's so much faster in groups. And so much more fun.
The dungeon mastery always has been a requirement in the Season Journey (since set dungeons have been introduced). But it's not big deal, every class has a super easy set dungeon, and there are some that are not just easy but ridiculously easy if you get help (for example the 1000 Storms monk dungeon).
@Metropolis_Man: Really? I personally found Curses is relatively easy, but not *that* easy. I guess depends a lot on which class you play... certainly no joke on WD, and I assume not on Crusader either. Of course ridiculously easy on DH. Not sure about wiz, barb, monk; probably doable but require a decent gear power level.
I'll update the SJ Tracker this weekend, after S7 has ended. As Tyvalir said, typos are always possible (as happened in S7) - if you're playing on Asia server and can "spoil" anything just post it in the SJ Tracker thread. I'll update the Tracker for S8 once S7 has ended and bump that thread. Otherwise I'll check it myself once I have the SJ completed on Saturday.
Conquests
Boss Mode (kill all 16 main bosses in 20 minutes on TX). This is the easiest conquest by far, even for a solo player; see guide here.
Curses! (kill 350 monsters in a Cursed Chest even on TX). Pretty straightforward and the second easiest conquest - you look for the "Cursed Peat" bounty in Path of the Drowned in Act V.
Divinity (GR75 solo) as usual.
Years of War (GR55 solo with six different class sets). Not as difficult as Divinity, but more time consuming.
Masters of the Universe (master 8 set dungeons). This one isn't as hard as it seems, you just have to gather the easiest sets. Here's a great thread with all guides for the different set dungeons; note though that the ranking is subjective. It may be easier to collect 2 sets from 4 classes rather than 4 sets from 2 classes!
Haedrig's Gift
As expected - we go full cycle and every class gets the last remaining set that wasn't part of Haedrig's Gift yet.
Barbarian – Immortal King’s Call
Crusader – Seeker of the Light
Demon Hunter – Natalya’s Vengeance
Monk – Uliana’s Stratagem
Witch Doctor – Spirit of Arachyr
Wizard – Vyr’s Amazing Arcana
Before someone asks: none of those sets is the amazing end-game set for either class, but all of them will work on T6 (some better, some not as good). In any case it's a good starter set that allows you to farm your desired class set.

Season Journey
The SJ stays the same except for the bosses that are being shuffled around. Tyvalir was so kind to post all the changes on Reddit:
