My little breakfast dish is a simple and cheap but definitely delicious way to start the day. I use the cats that I have freshly caught myself.
1 Fresh Catfish (Can be store bought.)
Some butter
Diced Onion and/or garlic
Salt and pepper
Eggs
Potatoes (or home fries)
Fresh pot of coffee
First and foremost, if freshly caught by yourself, properly clean and fillet the fish. Heat up a frying pan with a little butter and put the catfish in the pan when hot. Add onions and/or garlic with a little pepper. Fry one side till about golden brown then flip and do the other side. Add more butter for taste. Once it is done put the fish on a warm plate to help keep it hot. Cook some eggs in the pan however you like them. The onion and/or garlic will taste great with these too. I have fried up the potatoes after the eggs in the same pan and liked them. Put all on the plate with the catfish and add salt and pepper to taste. Get yourself a cup of coffee and enjoy! I will be happy to answer any questions.
If you have caught the fish yourself, putting the fish in a fresh tub of water for 24-48 hours while it is alive will have the fish remove almost all dirt from its body. If you do this, don't be surprised to see dirt on the bottom of the clean tub. Other fish may work just as well, I don't know as I never used other fish species.

I like to dedicate this recipe to my Grandmother. Kind of fitting since it is hers.
German Potato Salad
Serves 4
You'll need:
2 1/2 lbs Red potatoes
1/2 lb chopped/cubed bacon
1/2 white onion diced
Celery Salt
1 Tbsp Flour
1 Cup White Vinegar
1 Cup Sugar
Boil whole potatoes in their skins in salted water for about 30 minutes. Rinse in cold water. Drain and peel
In a casserole dish put a layer of thinly sliced potatoes and some celery salt over potatoes. Continue layering potatoes and celery salt until all the potatoes are used.
Cook 1/2 lb of chopped/cubed bacon until done. Drain bacon on paper towels. Set aside.
To the bacon grease, add 1 Tbsp flour stirring constantly for a few minutes to make a roux.
Combine the white vinegar and sugar. Add to the bacon grease roux. Whisk to combine. Add diced onions and simmer for 5-10 minutes. Add a little water if the sauce becomes to thick.
Pour sauce over potatoes.
Sprinkle cubed/chopped bacon over the potatoes. This dish can be served hot or cold.

After some thought and review, one of the best ways to do Cajun catfish is to simply pan sear it in a skillet with Cajun seasoning and serve with dirty rice. Now for some other ideas:
Remember that catfish is medium in weight(density), and the best techniques to cook it are:broil, deep fry, grill, poach, saute, steam and stir fry.
Good flavor pairings:
avocados, bacon, basil, cabbage, capers, cayenne, chili peppers, chipotle, cilantro, cucumbers, garlic, ham, lemon juice, pine nuts, kosher salt(a must), soy sauce, tomatillos, tomatoes, and a nice dry white wine.
As for serving with pasta:
Pan sear your fish in olive oil. make sure to squeeze fresh lemon juice on it even after turning. About half way through after turning it, add capers. Take a can of peeled pear tomatoes and put them in a pot and simmer. Boil your pasta and drain when finished. Add butter to the pasta along with the tomatoes and the capers you put in with the fish. dish out pasta on plate and lay the catfish over the pasta whole. You can even add some artichoke hearts in the pasta as well.

What about a Catfish Pasta with some sort of sauce? I can't seem to find a recipe for that. I am planning for a meal on June 25th and would also need a good suggestion for a side salad.
