I found a Stalgard's Decimator which has no socket. If I were to use the Mystic to add a socket now, and then found a Gift later, would I be able to roll back the socket the Mystic added and use the gift? I seem to remember reading that it wouldn't be possible but I can't find any definitive information.
Yes, you can reroll the socket to, say 10% damage, at the mystic. And then apply the Ramaladni's Gift to get an extra socket.
If you cannot reroll the socket into another stat (let's say you choose to reroll another primary), then tough luck.

That will work.
If the weapon already has a socket, you cannot put another one in it with the gift. What he was saying, say you got a weapon that already had a socket so you rolled Attack speed(for exapmple) into %DMG. You would not be able to roll the already existing socket off anymore.

To put it as blunt as possible, can only use a gift on a weapon that does NOT have a socket. Doesn't matter if rolled something to a socket, or a socket to something. If the weapon does NOT have a socket, you can use the gift to give it a socket.
