The stat caps for Critical Hit Chance, Critical Hit Damage and Attack Speed have been removed from the datamined files. The Lifesteal change is new though, so it remains. The other stats like Magic Find have not been touched.

Getting 5 (or even 10) characters to 60 is pretty easy. Especially if you use a hellfire ring. Getting them all to p100 is the hard part.
The way I understand it now is that when 2.0 hits, all paragon xp earned will be converted to the account-wide system, giving you a new paragon level based on how much xp you earned across all your characters. Any level 60s that you play on will continue earning paragon xp. When you install the xpack, your max level changes to 70, and you will not earn paragon xp while leveling from 60 to 70. Once a character hits 70, they will once again start earning paragon xp.
My point is that it will be more efficient getting paragon levels at 70 rather than at 60. So while you will get a headstart by grinding out the paragon xp now, whether or not that's worth it is up to you.
As I said above, if you're still having fun, keep playing. If not, don't worry about it.

Bottom line: we don't know yet how much you're really going to get out of anything you do between now and RoS. So any "preparation" you make now could potentially be wasted, or just not worth your time.

The only reason to grind p100 now is to get a headstart. Since you'll only get to 375 if you get 10x100, you're probably better off waiting.

Unless you were going for a tank build. Then you prefer as much defensive bonuses as you can get over whatever extra offense cru-shields offer.
Regardless, we really don't know yet how crusader damage will compare to the other classes, with or without the 2h passive.
There is plenty of distinctions between the classes, and even if crusaders were given the option to dual wield, it doesn't mean that many people will do it, or that it will be efficient. They are absolutely a shield class, and the fact they have several skills that focus on shields already makes them plenty unique.
My point is that saying they aren't intended to dual-wield isn't a good argument that they shouldn't have the option to do so. Demon hunters shouldn't use melee weapons, wizards shouldn't use bows, witch doctors shouldn't use 2h axes. But they can.

Depends on how much of a decrease it is, but if your only goal is paragon farming, then yes it's probably worth it.
It's certainly possible, but you've got your work cut out for you. Remember that 10x100 will not give you paragon 1000 instantly once the xpack hits. I think someone said it's like 375. Also, since you will likely be getting much more xp at level 70 than currently, getting that far will probably take less time overall after hitting 70, rather than doing it all now.
Bottom line, as long as you still playing a character less than p100 you are still getting xp that will carry over to your account-wide paragon level in RoS. So feel free to keep chugging until you get bored.

The idea is that each item can only have so many primary stats and secondary stats. This way, items are less likely to roll nothing but utility bonuses without any core offensive or defensive bonuses.

The theory is that items will get a portion of each, so strength won't be competing with move speed, for example.

Everyone knows what dual wield means. Crusaders can dual wield, but they're obviously a shield class.

Your gear won't matter when the xpack hits. Paragon experience will carry over, though, so feel free to level up as many characters to p100 as you like.
As for gold, mats, and gems, nobody really knows how valuable they will be. You may have a nice stash to work with or it may end up being a waste of your time.
Other than that, just do what you enjoy. Go for achievements, get all classes to 60, get some hellfire rings, whatever.

The demon hunter is explicitly designed as a ranged character. But they still have the option to equip certain melee weapons.
