As a monk, there is no best follower, only a follower that suits your needs at the time.
The Templar gives 12% Spirit Generated as one of final skill choices which is quite useful if you run a Tempest Rush build.
The Scoundrel gives 3% Critical strike as one of the final skill choices, which is most useful for Sweeping Wind: Cyclone as this can up your tornado spawn rate, and just an all round DPS lift.
The Enchantress gives you Force Armor in the second tier which gives you a 5% armor buff or in the final Tier a 3% attack speed skill. The enchantress gives out a lot of crowd control, so if you are struggling to survive, her little bits of control can give you the upperhand.
If you are not Paragon Level 100 yet, it is best to gear your follower with max magic find items, and %exp gain, as you will gain 1/5 of those stats towards your own. Say you get your follower to 100% MF and 35% exp gained, you yourself gain 20% mf and 7% exp gained. Other than those two stats in particular, your follower gets large bonuses from their main stats, eg Vit for all, Dex for Scoundrel, Int for Enchantress and Str for Templar.
I would gather 50-60 DE and start crafting with gloves, get a nice trifecta. After gloves, your bracers need upgrading preferably dual res. After bracers shoulders also, dual res 250+dex 70+ vit.
I crafted 2 trifecta gloves out of 100 tries, still trying to get that sweet dual res wrists :).

I'm having trouble deciding what I want to try and upgrade next with crafting.
My shoulders seem to be in a really good spot, But I believe i can do better on my Wrists from an EHP stand point. I believe my EHP is in a fairly good spot though.
So I'm having trouble deciding if i want to craft some new gloves with trifecta stats, or try and craft a new neck with some attack speed, or squeeze out some CHD.
Alot of monks like myself prefer the attack speed, which keeps spirit generation high and lifesteal at a constant increase instead of burst healing. With that spirit generation i can keep my overawe active up the whole time. Skorn may provide more paper dps, but usually less effective dps. Not to mention the more crits done because of the higher attack speed also provides more cyclones from Sweeping Wind:Cyclone which again increases the amount of lifesteal received.

I don't really understand what you are trying to say Maka, the bit about 'pool' you are talking about is nothing to do with difficulty but for the match making. And as the quote states, adding this will increase wait times.
