So Season 27 is the same as Season 15 as a whole (Conquests, Haedrig starter sets (Wastes, Roland, UE, Raiment, Rathma, Helltooth, Tal Rasha), portrait (Eternal Conflict), pet (Belphegor), I think it's safe to assume that this pattern is now established for future seasons as well.

What are your problems exactly? If you don't find the bosses quickly enough, you need to learn the maps, if you don't have enough damage, farm better gear.
I would also advise to read both guides thoroughly to see if you missed anything:
That should be the right monster and the correct location. You can confirm this if you find a blue pack because their name says which monster it is. If an area spawns a blue "Ancient Walker" it can spawn of yellow one too.
Also note that sometimes the achievement does not update right away and it can take a few logouts.

Yes, that rift is beyond hard, it is probably the first real "challenge" rift.
It will be impossible to complete for most of us, even in a group.
The rift was done by wudijo, it was his clear for the "The Thrill" conquest.
