The best way to know what to keep is know the main builds. It's a tall task, but it's easier than asking everyone else to do that work for you lol.
But seriously, "almost" every item in the game has a purpose.
As far as the, "universal list," it's pretty short. Items that do not have a legendary power(orange text) are usually on that list. Lidless Wall is the only exception I can think of right now.
This case is exactly why Blizzard started rewarding extra stash tabs for season journey's.
The best I can say; choose 3 classes you like most, pick 1-2 builds for those classes.
