1) Pets/wings do not cause lag. As you say, they may require processing power (though roughly 0.01% of what's happening on your screen, as they're very low-polygon and have no fancy graphic effects), but processing power is local. Lag is caused by calculations, and those are client-server connections. Since pets/wings don't interact with the environment in GRs at all - absolutely zero - their contribution to lag is literally 0.0%.
2) Pets do exactly what you say they don't: they gather gold. You should always have a pet out in Nephalem Rifts/bounties as it collects gold for you.

my best advice would be to contact blizzard customer service and open a ticket. If you're certain that you're logging in to the right region, then see if they can't figure out what happened.
For what it's worth, if your character is really gone, you should be able to get back to 60 (18) in just a few hours - the leveling up process is a lot quicker nowadays.

Just a few tips to help you out:
1) Farm a royal ring of grandeur from the act 1 bounty cache. It's pretty much essential for any gearing combination you'll want to use. You're missing out on the 4 piece SWK bonus and the 3 piece aughilds bonus from not having that ring.
2) Find recipes and upgrade your gems as you are able. Diamonds are good for your resistances until you have at least 800, then switch over to emeralds.
3) Check out the build section for monks - there are quite a few really good builds out there, that give you gearing suggestions and ideas on what to use in case you're missing a piece or two.
4) You're using "Harmony" but you only have secondary resists on 2 of your pieces of gear. I'd switch that out for "Sixth Sense" for added surviveablilty
5) Make sure you're spending your blood shards on armor - find a build you want to try and gamble on pieces you're missing to fit that build.
