I think you have some really good ideas on here Tombo. Hopefully the devs can come up with something useful for not only the Death's Breaths but the Forgotten Souls as well. Both materials are very underwhelming, especially after you've played the game for more than a couple hours at max level. I guess they'll be useful for seasons in 2.1 since you need these in large amounts very early. On live however, there might need to be some changes.
I have not seen anything about the use of Death's Breath in 2.1 or future patches and was hoping to come up with a solution for this near useless item. So far the best thing I could come up with is the possibility of using 'x' amount of Death' Breaths at the Mystic to undo any enchantments done to an item. This would be useful for people who may have enchanted a certain stat but now want that stat back to change another one. Basically you would allow yourself to reuse an item for possibly another class or build. The price of course would not be reset so people could not abuse the mechanic.
I would like to hear what you guys think about this idea and whether people out there have even better ideas on what to do with Death's Breaths!!
