There are no log files that can be analyzed, and the only way to reliably determine your DPS based on game data is by reading the game's memory - which obviously is against the terms of service. As we do not condone any third party software that is against the terms of service and this thread most likely will not result in any useful answers to you that are in line with our forum rules, I'll lock this. And tell you that the only (unsatisfying) answer to this question is: there is no reliable, legal way to display your DPS in-game.
The only way to measure your DPS would be to record your Greater Rift runs and stop the time it took you to take off ~100b health from a rift guardian (to determine single target DPS).
Sorry. (As a previous developer of WoW Addons I'd love to have the option in D3 as well but it's just not in the interest of the developers as of now, sadly.)
