With Gamestop they do give you the chance to pay it all upfront once a price has been decided upon. Whenever I pre-order anything from them I always choose the pay upfront option, as well as going to the store over ordering online and having it shipped to me. When you pay upfront and at the store, the people working there usually make certain that everyone that already has their copy paid for prior to release, and not just put a pre-order deposit, gets a copy first.
Of course I'm also lucky, I have a Fry's, Gamestop and Best Buy within a few blocks of one another. When SC2 came out, I ended up buying my CE of SC2 from Best Buy, because the other two were out. The luckily part for me is that the Best Buy doesn't get a lot of traffic because of the Fry's and Gamestop. Their limited selections turn away most people, and keeps what they do have in turn in good stock.
