I'm a huge fan of Sir David Attenborough, so Blue Planet and Planet Earth are two that I definitely recommend, as well as his more recent Frozen Planet, which focuses on the North and South Poles.
Since you like Nazi hitory, you might enjoy "Triumph of the Will" (german: "Triumph des Willens"), a Nazi propaganda film from 1934 created by Leni Riefenstahl and comissioned by Hitler himself. It gets quite slow and boring at times, but it is a very important piece of history that you should not miss.
"Life" is another exceptional documentary series with Attenborough narrating; very similar to "Planet Earth" except all about different kinds of animals around the globe and how they've adapted to where they live. It was brought over to the states and narrated by (ugh) Oprah Winfrey, a pale imitation of Attenborough.
I also really like "The King of Kong" about an average guy who tries to break the world record score in Donkey Kong.

James Bond: The True Story. yup, though Bond is mostly fictuous, a lot of the matierial behind it is actually quite true. Ian Fleming, I think it was, had a hand in a lot of counter intelligence during the second world war and all.. do check it out, even if you're not a fan of James Bond.
Yeah, Ian Fleming wrote the original novels for the James Bond series. The book for Casino Royale was published in 1953, but the 007 movie came out in 2006. There were 2 other adaptations for Casino Royale, but Daniel Craig made it SO much better... <3<3<3
Yes, whether you do or don't smoke weed, watch The Union. Very good documentary.

No one mentioned "Cosmos"! It was written and narrated by Carl Sagan back in the 70's or 80's but pretty much all the information is still relevant. on netflix and hulu
Another good one I saw on Netflix was "Prehistoric Disasters". It explains how some of the most massive natural disasters in earth's history (not human history) have influenced the evolution of life.
If you like WW2 stuff I recommend "War of the Century", which focuses on the war between Germany and Russia in disturbing detail. You can rent it from netflix, but I don't think they have it streamable.
Ken Burn's "Civil War" is probably my favorite of all time. There's no cheesey re-enactments, but a lot of interesting information like quotes and anecdotes from people who were there. on netflix

I recently (as in yesterday) watched Religulous. It came off as kind of one sided and mean at times, but I knew what Bill Maher was trying to do and, while I wholly appreciate it, I wish he would've been more fair about it.
I have yet to see The Union, but I want to.

I'm not going to lie. I recently watched one about the guy who does the voice for Elmo. It was actually really inspiring. The guy devoted his whole life and struggled numerous times in his career to get to where he is.
If you are the type of person who believes in devoting all of your effort to accomplish something, you will like it.
