Small Grift floors with just a few dozen monsters total are pretty common. As are exits that are like 5 steps from the entrance. If you want to clear the floor, you'd end up wasting time coming back around to the exit after you were done - so it's just better to move on to the next level. In fact, it's always better to move on to the next level when you find the door. Trying to full clear every level is just stupid.
I've seen 6, to the best of my memory. Unlike many others, I like the variation in monster types and tile-sets. Yes, even the Sewers. I do wish we had greater density as tiers go higher, with an accordingly set timer. A better approach to difficulty would be not just bumping numbers, but presenting the players with massive, escalating throngs of Elites.
7 is highest ive seen, and 2 of those were hellrifts, 1 were tower of the damned. The others were 2x lowpop cathedral/1 pretty small sewer and last was a medium populated area from act5 (the one u enter a portal that a big mob carries on its head in battlefields).
The highest nongreater rift ive seen is 10 lvls. was a cowlvl and all 10 were small cathedral lvls.

This would just lead to players rushing through the first few floors to get to the denser packed floors after. Not ideal gameplay.
I see 6 and 7 floor grifts fairly often. Definitely more often than I see single floor grifts.
I really don't like them. What's the point of getting the hellrift ones when they have like 10 mobs inside or 1 pack and nothing else? The density in 6-7 floor grfits does seem to be deliberately awful to draw it out. You spend most of your time running with nothing to kill.
That said, I agree with ruksak about the variation. I do prefer that. If you get one floor with awful mobs, the next might have really nice ones. It's a shame the density is so rubbish.

I meant escalating as the Grift level went up, not as the floors go down. I should've been more clear. I don't care for their current approach of only extorting greater difficulty through exponential number (monster toughness/damage) bumping.
Example; Grift 32 would have a higher density of Elites and white mobs than Grift 28, and an accordingly adjusted slider/timer.
Honestly seven floors is better than one. If you die 2/3rds of the way into a single floor rift, it takes 3 minutes just to walk back. That being said I don't think I've had more than 4 in a grift.

That only applies to Softcore. I find one floor far better on Hardcore; plenty of space to play with.

People are supposed to clear 6 floors and a boss with 30bil+ hp in 15mins?
There is no reason people should ever see a 3rd floor in a grift.
Also, who gives a rip?
