An overall guide however is completely useless in my opinion, as it completely depends on what items you find and your playstyle (especially, do you play in group or not). Also, if you find a certain weapon that works well for a certain skill you should probably use that - for example, if you get an ancient Incense Torch on day 1 you should just go for Wave of Light before you complete any of the sets or find some other items that allow you to play a different build. There's not only one way to play this class, which is what makes monk so awesome.
1) Again, it completely depends on what you wanna do. Solo or group? There are multiple specs right now - again, check out the monk section. In general, gamble for armor pieces that cost 25 shards - helmet first, then chest, shoulders, boots, pants, gloves. Bracers, belt later. I ended up gambling rings pretty soon because it's quite easy to get set items when rifting, and I desperately needed Focus and Restraint. Also note that if you find two times the same set item you can use the cube to re-roll it (does not work for 2 piece sets).
2) See above, check out the builds section. Heal monk for support in group and Uliana's for solo but also in groups are most popular, though I personally think starting out with the generator build is probably easier. However, just go with what items you find.
