I've been using the Scoundrel with Windforce for a long time but then I got a tip about equiping him with Buriza-Do Kyanon and alot of attack speed items which in the end was a really nice combo compaired to the Windforce. Sure the WF knockbacks alot but with the BDK and a high pierce chance (80% is max) everything the Scoundrel hit's gets slowed thanks to the cold damge and almost every time it pierces the target which ends up with alot of slowed mobs. And every now and then he freezes mobs which is pretty darn nice.
Sure the follower will not do any damage (mine is like 300 dps or something) but in the end having mobs almost slowed all the time compaired to 3500 dps is way more better if you ask me.
I think I'm going to give the Buriza a shot (pun intended)
I use the enchantress only. She provides an attack speed and armor buff. Not only that, she is capable of equipping 2H weapons, which means she can wield The Grand Vizier. The Grand Vizier has ~45% GF and ~45% MF, and can roll in excess of 1200 DPS.

Azmo dropped a Grand Vizier for me the other night and now my Enchantress is even more help...
I used the Templar during the entire time I was leveling, but he became worthless when I got to Inferno.
I used Scoundrel for the next few hundred hours and gave him a cold damage bow, which worked out great.
I've been using the Enchantress for a while now just because of the MF. I have her weapon and all items just pumped with MF and her extra IaS and defense help. Her armor buff is going to be nerfed in the patch, so I'll probably go back to Scoundrel since I won't need the MF as much.
Quick Update: I've been running with the Scoundrel / Buriza combo and so far I like it a lot. The slow comes in awfully handy! I honestly never put much thought into what affixes my follower's weapons had.
I have found my Templar to be very useful in maps with chokepoints. I have beefed up his survivability and I equipped him with an Azurewrathe sword. Azurewrathe's aren't that expensive, and offer both Cold dmg as well as a very high chance to Freeze. He stops lots of monsters dead in their tracks.
For open areas with lots of monsters, I used to run a Windforce equipped Scoundrel.
However, since 1.0.5, I've changed to having the Templar full time because I now run a Sentry/Spike Trap build, which calls for having large mobs grouped up on top of you.
