Honestly if you play enough any build will get boring. Then it comes down to efficiency and that is whirlwind build by a huge margin, the constant +80-100% run speed is just too good.
All builds are "viable" as long as you have the gear to support it, it comes down to a matter of efficiency.
Sprint/whirlwind is the way to go for efficient farming and paragon levelling. Any other build will work, as long as you have a reliable way to regen life and have sustained AoE (Rend/revenge are both good). The use of cooldown-based skills (earthquake/ignore pain etc) is optional depending on the strength of your gear. Gradually you will want to phase them out because they're not efficient.
Your question on dualwielding is far too general (chicken or the egg question). I.e. what build you use will depend on the gear you have, and the gear you want depends on the build you intend to use. I suggest reading up on the many many posts that discusses various builds post 1.0.4 buried in these forums.
Yes this!! Though I use Nerves of Steel instead of Berserker Rage. I upgraded some of my gear, I got a 1274 dps 2hander and I have 700-800 resists with War Cry. I'm steadily progressing through Act 3 at a non-frustrating rate. I die about 4-5 times per new area, but I think that's pretty acceptable for progress.

Also which builds are viable when dual wielding weapons, and what weapon types should be used when dual wielding?
I am not a fan of the whirlwind-spam build, since it seems very boring to me :/
