Do you farm at mp5 regularly? Have you timed your runs? It's usually more efficient for you to farm at mp0-1 because you kill much more enemies than the bonus in exp or magic overall. I'm not sure if you normally run with an amythest in your helm, but a ruby for exp gain would be much better for you long term.
I would focus on DPS upgrades and mow through lower MPs. Then you don't have to care so much about EHP and more about clear speed. It doesn't sound very intuitive, but I find that as I upgrade my DPS it helps my survivability in higher mps more that defensive abilities. High dps directly increases your life steal and reduces the average number of hits you take from enemies. All you really need in EHP is enough to take the hardest hit or two anything can dish out, as long as you have enough life steal/life on hit to get it back quickly.
Usually, I farm mp1 for exp, and mp5 just for some fun and loot via higher MF, and keys, of course. For mp1 I change one of my rings for Hellfire and amethyst for ruby

I hate to be the bearer of bad news, but you are at a point that your going to need specific upgrades that can be costly and you will have to sacrifice some vit and a lot of resists if you want them to be in the affordable range. I was in the same place you are, not too long ago and started buying selective upgrades as I could afford.
Some of these upgrades have IAS on them. The 8% is always cheaper than the 9% - but my philosphy was that if I was going to drop a lot of gold on something, it might as well be the best I can get for that specific attribute. Its just going to be gold you have to spend down the road.
New Main Hand with a socket
Going for something slow with your Echoing Fury is fine - but you need that socket and the CCD you can gain from it. I would suggest looking for one that has lifesteal on it, rather than life on hit. Once you are above 100k dps, you gain so much more from lifesteal than life on hit.

Wrists - Lacuni Prowlers with Dex and CC. The IAS comes with it, but make sure to get a 9%.

A pair with all resists is going to be expensive. So I went for a pair that has my chosen resist on it. Look for something with CCD in the high 30s to low 40s.

Nat's Boots and Ring - when you can afford it.
You can go for a ring with CC on it - but again its going to be rather expensive. I haven't invested in these yet, because the price difference between a ring without CC on it and one that does have it - is huge. So I'm waiting. But with the two pieces you can add another 7% CC.

Taking a quick look on your gear, I noticed you have extremely low dexterity. I also noticed you have high crit chance and decentish crit dmg. Ideally you should keep the crit chance/crit dmg ratio at 1:8(your crit dmg should be 8x higher than your crit chance). Right now you have an extremely high crit chance for a lower crit dmg. I would tell you to increase your dexterity and crit dmg while mantaining your crit chance, but considering your gear, you musn't have a high budget so I would advise you to loose a little bit crit chance and get a higher dexterity and if possible increase your crit dmg. You could always wait until you have a decent amount of gold and buy superior pieces of gear altogether, with high dex, crit and crit dmg, but it's your choice.
Your gauntlets for example, you should be able to find gauntlets with close to 200dex, a bit less crit than yours but still retaining the crit dmg.You can also get a belt with higher dexterity and you could loose one of your rings for another one with 140+ dex + crit dmg(having crit chance also is a plus but they are more costly). You could try getting a better weapon too, I have seen 1,1k dps xbows with crit dmg being sold fairly cheap.
Another thing that I noticed is that you have around 193 AR, are you making a balanced DH(good hps/AR/good dps) or a glass cannon(full dps, doesn't care about survivability)? If you are going for balanced you could try upping your AR too, it shouldn't be that tough getting around 300 AR and you will notice a huge difference in the amount of dmg you can take. Your hps aren't bad but if you can upgrade them it would also be a plus.
Finally, my spec is very similar to yours, I don't use Night Stalker but Vengeance(I like the quick recharge in terms of hatred and discipline and the extra hatred) and tons of people prefer sharpshooter(good dps boost). The other skills, the only difference is the Preparation glyph, I prefer the "Invigoration" one for the extra discipline. Another thing I would advise you to do is to get a quiver or cloak with + discipline(with better stats than yours), the extra discipline really makes a difference in a tough fight against elites because casting that extra smoke screen(or 2 if you use Invigoration) could mean surviving in a fight .
About the fast affix elites that are already fast, it all comes down to dps, you have to kill them fast since you can't outrun them or kite them. So, you will only kill them effortlessly when you get a higher dps. You will be able to get away from them and spam smoke screen while downing their hps fast before running out of discipline. As for the snakes, depending on the affixes, they can be a bit challenging even for better geared DHs, but it gets easier as you upgrade your gear.
