Alright, well I haven't played d1 very much at all. I play d2 reguarly. But like most other players I don't really pay attention to the storyline I just play the game, mf and get good items.
What I don't understand is, if you kill diablo in diablo 1, and we killed diablo in diablo 2, how does he keep coming back for the next game?

Go dig through your game stash and find the manuals. Read everything and it should help.
I would think that most players who are real fans of this game DEFINITELY follow the storyline. Thats the most important part for me.

I recommend you play D1 and D2, paying attention. It's a very complex and interesting story, with characters backgrounds and moral issues. That makes Diablo DIABLO. (!)
The info:
In Diablo 1, you defeat Diablo in his human host form (Prince Albretch). In the final animation sequence, you can see the hero (the warrior) stabbing himself in the head with the soulstone of Diablo, with the idea of retain him and being a "living cage".
In Diablo 2, you figure that the hero of D1, couldn't resist Diablo's influence and went corrupted. So, progressively (?) in the game you can see the demonic mutation of the Dark Wanderer.
Again, you destroy Diablo, but this time you destroy the soulstone, sending Diablo into the abyss.
From here, its not revealed how Diablo did come back to life. I assume (from what i've read in the forum) Lilith did the Dark Ritual, summoning Diablo into the mortal plane, making him independent of a host to remain in the plane of sanctuary.
I don't really play for the story, but more for the enjoyment.
I mean, I get the basics of the story, I don't pay much attention to the other angels and the evils and stuff that's not actually explained in the game.
Heh, hate to break it to you OP, but most of the players (here atleast) pay attention to the storyline.
But many don't, so don't feel bad :D.
As others have said, the game manuals are a MASSIVE source of information, as well as the lore in game.
Play through D1, find all of the random tomes laying around, they're a very good source of lore, the one on the sin war especially.
I don't recall as much lore being contained in D2, but watch the cinematics, they're quite entertaining, and also contain much of the more important lore and backstory.
Aside from that, read wikis, play the game, and ask around.

i think the main theory is that the warriors of Sanctuary can't fully kill the demons but being able to defeat them which banishes them back to the Burning Hells for a while.

- Everything you ever wanted to know about the lore of Diablo and never knew where to look (In construction).
And...according to canon, at least, Diablo is one of the three supreme lords of Hell...so he can't be easily beaten.
