Well, as Skyrim is a Bethesda game, it's gonna be chock full of bugs. I thought we could share what bugs we think we've found, and what we think happened, to try and avoid any...unnecessary...issues.
I've found only two bugs of any significance, although probably one is actually a design choice, both are for PC (please include the system):
1) Twice now my game has crashed (and crashed fast, it booted me to the desktop faster than if I clicked on quit). Both times it has happened when I was looking at my inventory and tried to tab out. I think I was looking at a book both times, though I'm not sure. About my only advice to avoid this is just to save often (thank you quicksave button).
2) This one may be a poor design choice, but, if you wander into the middle of the side quest without starting it normally, the game awesome you have. I have a thieves guild quest complete, even without joining them, because I wandered into a cave and found a diary.
What other weird stuff have the rest of you found?
Edit: I forgot about this one. Don't pester the giants, or this happens. Not sure if it's a bug or a feature, but it's awesome.
I killed the guy in the spiderweb in the first cave before he could run off (I already knew he was going to attack me, so I killed him first) and know I can't finish the quest, nor can I "cancel" it.

I found a bug (pc) in one o the school of magic quests. You have to use fire or ice to move a focus lense. Mine wouldnt move at all, turns out its pretty common. What i had to do was enter a command code to act like i aimed the light. Dont remember the code but easy to find on google

Maybe I'm mistaken and the quest isn't supposed to end there. On my first playthrough, I saved before the spider, let him run away and attack me and killed him afterwards, and I think (not really sure) that the "Find the Golden Claw's owner" quest was completed. Although it doesn't really make sense since that guy is just a theif. I suppose it's not really a bug.
While riding a horse and switching views from first to third person the horse will disappear and my character will just sort of float along for 2 minutes or so.
Like Dauroth, my character's skin clips through scaled armor under his left arm (only obvious when I'm mining).
A somewhat larger one - during a boss battle against a draugr that had the unrelenting shout...shout. When you get knocked over by it, the game goes into a third person and shows you going flying and rag dolling. You then stand up (slowly, and still in first person) and sometimes clip through the environment/your body goes at weird angles to fit (such as your head is 90 degrees to the left, or your character looks like he is on his knees, but floating on a draugr tomb). Anyway, all that is annoying, but not the bug. The real bug is I got hit, and would not go out of third person. Even more annoying, the game still thought I was in the "effects" third person, so the camera was always facing the wall/away from the boss. I managed to fix it by getting hit again, thus forcing the camera into the "effects" mode, and it switched back to 1st person normally after that.
I got upper cut by a giant and flew up higher then the mountains. after I stopped laughing I got up off the floor and restarted. My girlfriend watched too and she just about died laughing too.

I don't have a source but I believe that is actually intentional from Bethesda. I wish I could remember/find it : /

Was that a bug? That happened to me too and I thought maybe they really were just that strong. Though it seems if they could hit me that hard for real they'd just pop my head straight off instead of launching me hundreds of feet in the air.
What's happened to me is the game arbitrarily crashing at times. Or sometimes I get stuck in a dialogue menu and can't back out. And sometimes a tree or even a dragon would appear all rendered but in its bare 3D state. So it might look all purple and you can see all the grayscale on it. I've noticed when I get those bugs though it seems to be a prelude for the game crashing.

well after climbing up a mountain to kill a dragon and learn the word for animal friend or something like that.. the only way out was through this "windblown pass" once i entered the pass the game saved (which is my only save atm) once i load in the pass.. i cannot take a step in any direction or the game just closes to desktop. i loaded 5 times and tried walking front back left right and front again. so right now my only saved game is at 25 hours and crashes no matter what i do. start over? hope it will work when i calm down so i dont punch through my screen.
Here's a bug I just got. Happened after I activated the aura whisper dragon shout. Now my eyes are stuck like this. Granted it's kind of cool looking but it actually gets pretty annoying after a short while. I can't decide now whether to load a game before I activated the shout since I don't find it that useful anyway, or just hope that the game can patch it up.
I have just hit 90 hours playtime and the only bug I had was an arrow sticking out of my head for a few days in game, and a body or two that was very hard to loot. Well and crashing to desktop/texture problems, but that was the game not using my RAM properly which I fixed.
That's a ram problem? I don't know, the game crashes on me like crazy. I quicksave constantly just cause of this now. And then other times I still get that problem where random things appear all purple.

Sheesh buddy. I've just hit 60 hours and I seriously can't even look at this game right now. LOL
About the only serious bug I've been running into lately (besides the occasional CTD when you hit tab/go through a door) is that all my homes seem to have a poltergeist. As I'm interacting with my house (enchanting, placing armor/weapons/books in the displays, just walking around) I here items move around, kinda like a pot is being thrown around the house. As soon as I turn though, all noises stop. The only thing I can guess is some of the place settings and the food on top do not sit well, because the noise seems to stop if I remove any of the aforementioned items that look to have been disturbed.
