If I'm not mistaken, there will be no Ultra option for D3's settings. Just a High option.
And don't worry, you'r PSU is just fine. I've a pretty similar build to yours and I've got a 550W PSU and 8 months later I've never had a single power issue.
Siaynoq is right. Your total system power usage will probably peak around 350-400 watts so a 650 watt PSU has plenty of capacity to spare for future upgrades.
Since you only have one expansion card, you could go with a Micro-ATX board and smaller case, if you want.
Diablo 3 is mostly GPU-limited, and the 560 should have no problem hitting the game's maximum quality levels.
