I understand that followers are not meant to kill anything on their own but.. come on, Im dealing 2.5k damage and my follower (a templar with decent items) is doing... 2 damage... no 200, no 20, 2 (TWO).
In the other hand, their stuns/heals/etc are quite useful, but, increase his damage a little, it wont hurt anyone and it wont change the game mechanics at all.
Trying to up the Templar's DPS is an exercise in futility. I haven't messed much with the other two followers yet, but I don't think it's as bad. The Templar does have some pretty solid abilities though such as heals at key times.

Given my relative fail as described in another post of mine, take what I say with a grain of salt, but...
Having now played with the Templar and the Scoundrel, I've seen what you've seen, that your followers are not intended to be able to solo any of the content. Instead, I've seen them as providing tactical assistance to offset potential weaknesses in your class/spec.
The Templar, being a melee type, will typically run ahead toward oncoming mobs, requiring that they move around him to get to you. This can reduce pressure and perform as a snare effect of sorts. Additionally, the taunt can also relieve pressure in some cases. The healing abilities are nice. In essence, the Templar is nifty if you are the glass cannon type but still useful in other cases.
The Scoundrel, being ranged, will not be wading into battle ahead of you. But he does add potentially more DPS than the Templar while also applying various debuffs to your targets including poison, blind and snare effects, stuns and crit buffs as the final ability, with an emphasis on single target attacks. If you are building a spec that's a little thin on damage or control, the Scoundrel could be a good choice to help offset this.
Perusing the Sorceress' abilities, I see more of an emphasis on buffs and group debuffs. So perhaps if you are building something solid for single target offense/control and could use help with packs, perhaps she is a good fit.
What I don't see them being is a means for you to delegate mob kills.
