At what point does one look to replace Energy Armor with Storm Armor? I tried it out today a little bit and lost a LOT of my ability to survive. It was nice to have that extra damage, but I think at this point it's just necessary to keep it.

1) What MP are you playing on? For MP10 every extra EHP helps. 35k HP, 5000 armor, 800 allres are the rough key figures for MP10. Actually, in terms of unbuffed EHP you're already capable of MP10, but I guess a bit more allres wouldn't hurt to increase mitigation.
2) Your major problem of survivability might not necessary be the EHP, but your basic CMWW stats.
You're at 2.62 APS, 44% crit chance, 18 APoC, and 764 LoH. These basic figures work, but they're all on the low side, in particular crit chance is a bit low. If you were to get a bit more on any of these (e.g., get a 10 APoC MH instead of 9 APoC, aim for the 2.73 APS break point, or raise crit to 50%+) your CMWW rotation will become more stable and your survivability will increase.
3) You switch to Storm Armor once you feel comfortable enough, as simple as that. I reached this point exactly when I hit 5k armor/800allres unbuffed. Because mitigation is key (and HP less important), raising armor+allres until you're satisfied is the most important thing. By the way, an intermediate step is Pinpoint Barrier; it gives you a slight DPS increase but also helps to improve your stunlock by adding 5% crit chance.
Try Deep Freeze rune on FN. With the mob density it's like Cold Snap and Bone Chill all in one for solo play. That will help your survivability a bit. Otherwise you should be fine with SA at MP6-7 or so. Otherwise you'll want more AR for higher MP. If you calculate your total damage reduction I recommend around 87-88% for MP10, if you want some target goal.
In the end I'd use SA and just lower the MP if survival is an issue. If you still can't survive at MP4-6 then something else is wrong.
I have some gear for Archon and had been doing MP1 Act 3 clears for awhile now, except for the occasional MP5-7 key run that I would switch to cm/ww for. However, since the density buff I decided to give MP10 Act 1 a go with cm/ww.
I'm trying to craft gloves with attack speed, crit chance, crit damage. Afterwards, I'll try to craft an amulet with the same thing.
The only other way to get attack speed is to find a legendary that will sell well and get a pair of Lacuni's with crit on them. Or the few pieces that I have with attack speed that don't have the highest % of it, which would still cost me quite a bit and I'm on the poorer side of things.
I suppose I could try to get the legs I have now with All Resist on them to help out as well with losing Energy Armor.
When I tested my Sorc on MP10 vs the several bosses that appear in the uber fights, I actually had to switch from energy to storm armor to make it in time on Siegebreaker. He enrages after some time and while you can facetank that for a rather long period of time, it seems to become stronger and at some point you just can't keep Crystal Shell up anymore.
I think, he enraged at about 40% hp with the EA setup and at about 10% with SA. The latter was no problem.
So, what I want to say: Don't always think "Defense first".

yeah u loose survivability, and you cant just stand there anymore. the occasional dodge is required.
But, since you're cm, your damage output is not lowered just because you dodge.
The moment i got stormarmor i just wanted to never swap back. so much more damage
