I'm trying out lowering my amount of vitality in favor of stacking +all resist, and I'm wondering if there's an easy way (spread sheet possibly) for finding out which stat (armor vs all resist) will provide more dmg reduction as the diminishing returns increases on both of them.

As a wiz though, since the force armor nerf, I have to try and limit incoming attacks to %135 of my max hp. So in order to do that I need to know how to balance resist and armor, with HP in order to do that.
I know you don't need them, but it is a viable alternative to health pools, and it also has the added bonus of making health globes/potions/hp regen more effective since you have a smaller health pool and take the same amount of damage relative your max hp.
Armor and resists is a far more expensive route to go than stacking HP and using force armor. I really don't have a lot of experience with that so I can't really help you with that :/

Substituting resists for vitality on some pieces can lower your total health, but keep incoming damage as a % of your total health constant, while the healing done from all effects becomes a larger % of your total hp.
I'm aware... but like I said, getting good resist/armor gear is expensive. You can gear out a wizard in vit/int gear with like 17% movement speed for under 1m and have them be able to breeze through Act I, II, and parts of III.

Ahh I misunderstood, by expensive I thought you were talking about in terms of an item's ilvl and stat budget rather than gold.

The only thing you can't see is my movement speed, which is sitting at 17%.
