After doing a lot of upgrades and searching I think I'm in a lot better place now. However I've hit a brick wall on where to go/what to do now it feels like. Well unless I suddenly get BILLIONS of gold to drop on one or two pieces of gear.
As an example, I've dropped down below that 2.1 attack per second mark, just barely, so want to get some more attack speed. But trying to find it is being harder than I thought. The "obvious" choice is a Mempo, but I'm only at 48% crit chance right now, 6 of that from my helm.
Sure I could find a Mempo with like 3% crit (so I'd be at 45% and I'd still have the 1:10 cc:cd ratio) and boost the attack speed and get some more resists to move away from one with everything. For like 300 Million. I ran the numbers in D3UP simulate thing and I'd only gain 1.2k DPS and 4k EHP, but my HP would drop 2k to 28.1k. Doesn't seem worth 300 MILLION for such small gains. Though I could get around 500 All resist, WITHOUT OWE.
I know I can craft a couple things that may be good and get good rolls, but I have a very limited supply of the essences to make things with. Especially after crafting to get the Amulet I got.
So if anyone could give me some suggestions on specific items/ideas I would really appreciate it. Even if it's just "get crafting" and I have to go out and try to farm the Demonic Essences.
Your dps will improve a lot by aiming for the following stats:
45% crit chance (you are already there)
450% crit dmg (you have a lot to gain here)
attack speed...stay above 2.1 att.pr sec if possible, but this is not your main concern atm.
As much dex as you can get, but aim for 2500+.
You have most of these already, but one is far behind. Your crit damage should be in a 1:10 ratio with your crit chance. You can gain 220 from crit dmg gems (110 x 2) if you find weapons with a socket. Every weapon should have that, no questions asked. you will prob need to swap out those fists you have though. And to be honest, you should. The set bonus is nice, but the fists are (in general) terrible.
Skills
Sweeping Wind - Cyclone? Check
Fists of Thunder - Thunderclap? Check
Mantra of Conviction - Overawe? I really recommend this. It is such a dps nerf not to use it.
The rest is up to you, really. Play what works for you I will reccommend my build when you get up to MP10 down the road.
Gear
Improve what you can get. You seem to be on the right track though. You have enough armor and resist for medium Monster Power levels, but you will see a huge increase in efficiency if you find weapons with socket (for crit dmg gems) + some dex and or crit dmg + Life Steal (on one or both).

Not much obviously, but I imagine removing attack speed from the weapon would greatly reduce the cost for a higher DPS weapon. Of course if I kept that then I could remove it from somewhere with a lower gain for maybe more crit damage too. Love balancing acts.

+ Att. speed on weapon is a very bad stat, so weapons WITH + X% att. speed cost far less than those that have other more usefull stats. The att. speed affix will affect the dps number and "lie" to you about how much you gain. A faster weapon (dagger, sword or fist) has high base attack speed, but suffers from low dmg range. It is not a bad idea to ha a slow weapon with high dmg range as a main hand. It's not the dps that buffs your spells (sw cyclones etc.). It is the dmg range.
i.e. it is better to have a wep with 1000 dps and no att speed affix than one 1100 dps wep WITH such an affix. I generalize, but I find it hard to explain.. I'll try again later if you don't understand
Mantra's are important, but you'll find what suits you best and stick to it. I will say however that Mantra of Evasion (dodge bonus) only helps you against a small percentage of the attacks you receive, while Mantra of Conviction is always on.
Forget to say that as Rhye said MOC is much better than MOE unless you need additional defense desperately.
MOE adds 48% DPS if you have enough spirit which I do, and MOE reduces dodge in a diminish return matter for which monk with high dex should have enough dodge in general.
While that makes sense on the + att. speed "lieing" about DPS, it almost seems like it's needed to have to get above that 2.1 attack rating. Well, at least with my gear and "budget". Trying to find pieces of gear with everything I need is hard without dropping a ton of gold on things. Granted I could drop my Inna's head for a Mempo, I like the 4-pc Inna's but once SW is up I don't recast it that often unless I run a lot of space between fights. Which means spirit regen will happen anyways. Plus I know Speed Palm builds use 2 generators anyways lol
As for Mantras... I actually have gone to Conviction: Overawe again. It's nice to things just DROP with it running, and I can often times spam it to keep the initial 3 sec thing going... especially single target. I'm also using Exploding Palm atm (though I think I'm on MP 4? 5? So I know not as effective) and loving the sheer melt it gives to groups with that and Cyclone. I'm kind of combining the Speed Palm and "Cookie Cutter" builds as I just don't like Seven Sided Strike much due to the CD, and it seems like the Bell Drop (forget the name) is better with a big beefy slow 2h (in my TR I could almost 1-shot most elites on MP0 with it).
Speaking of Speed Palm builds though... I notice you're using an Echoing Fury. How often do you find that the fear kicks in and does it cause you any problems with exploding palm? I've been sorely tempted by them, but in the Speed Palm sticky it mentions that it's not the greatest to use with Exploding Palm....

My EF is only used when I do uberbosses or farm with a CM wizard (they freeze mobs 100% of the time, so the fear is not a problem). Ahh that makes sense. Just bad timing to look at your char as it were lol. I actually grabbed a pretty similar (little less DPS/Damage and not as much crit) WKL to that one. Nice to know I'm almost there in that regard.
I also picked up a few other things and am now sitting at 45% crit with 527% damage, so I'm slightly under (over? whatever) that 1:10 ratio thing. But I lost some attack speed because of rolling a nice high crit/crit damage/dex crafted Amulet. Also doesn't have my stacked resist on it though so I kind of took a double whammy. But I'm at 470 Resist and 1.9/2.0 attack speed (mh/oh) so I know I'm narrowing in on a butter zone. Probably going to get a Mempo (*shudders at cost especially after the duping*) to bring up that resist and attack speed. Then it should just be a matter of looking at some pieces of gear that don't fit my stacked resist while trying to balance out some more crit/attack speed and not lose too much crit damage.
On the plus side though, before any of that D3UP shows me at 152,843 DPS and 284,737 EHP. Not bad from where I was (though I think I had more EHP) and I've been comfortably farming keys/xp/gold on MP5 without taking 20m to kill an elite! So big yay there.

Attack speed in weapon is already factored into the weapon DPS shown in the screen, so it is misleading if you take this into account.
As Rhye said, as far as possible, try to avoid AS in weapon unless you need additional speed for certain purpose, say more LOH.
Further more, weapon DPS alternates between hands, so on average it is only counted half, whereas AS in ring and amulet will be counted in full.
