So I've been working alot on increasing my dps on my monk over the past two weeks. I've gone from a measly 17k to 50k with a self buff.
I used to sit around with 1150~ res and cut it down all the way to 680. Is 680 resists enough? And As a result, I've found some elites to be a bit more difficult.
Should I switch out Mantra of Conviction+Overawe for Mantra of Healing+Time of Need? I've been having issue against surviving against certain elites, As in, I die more often than I'm used to I guess. Mostly the arcane sentries and some molten/plagued mobs give me a run for it. I usually swap my crit hit dmg weapon for this one in tight spots. I

- double resist on chest and wrist.
- single resist on both rings while keeping at least two offense stats + dex (average damage, crit chance, crit damage, attack speed). Skip on vita if necessary
- double resist on gloves or a second offense stat (see above)
- single resist on amulet, vita or third offense stat
- while 6% more Fist of Thunder looks nice i wouldn't sacrifice on both resist and vita in exchange on your helmet
- boots: where's the runspeed?
- more dps on your mainhand. While 95% crit damage and over 300 dex are really good this piece is lacking on the raw damage side and sadly has no socket. And your offhand could need a socket as well. But those two changes might be the most expensive ones, so i'd delay them. Alternative: %lifesteal.
Basically you want to swap all your gear step by step, aiming for 4-useful-stats on all slots before advancing to 5-useful-stats and so on. The list above is in no particular order, just wrote them down while looking over your pieces. You might end up blowing your whole budget on every possible upgrade, so just be patient.
On the mantra question: simply, no! MoC/Overawe is just that good, if you have to swap to another mantra you might be better of using more resists/defense pieces, a permanent 24% damage boost (48% on demand) is just to good to pass upon.

Any recommendations on weapons? I will most likely get them last. It seems like getting better armor pieces might be imperative here since i've lost a bunch of resists.

You might have to wait for 1.0.5 to see how you fare at various MLs.
Leech is the major issue playing at high ML.
Maybe this dagger goes very well with a high DPS MH?
