After completing inferno act one with ease, and farming for act two and finally completing it, I think I've reached a brick wall. I'm completely getting annihilated by even normal mobs and can't progress past the first quest of act three. Is this a gear issue or a skill issue? I'm seriously losing all hope in completing inferno with my monk, the game just isn't fun when you're wiping every two seconds on a melee character.
My statistics are as follows (completely unbuffed - no mantra or enchantress):
I'm actually curious too. I'm sitting at 1450 resists, and white mob's fireball attacks are taking half of my HP per attack (Act 3). How in the hell am I suppose to get higher resistances without spending money on the RMAH?
just from having a quick look at your stats, I can already tell you are taking more damage then you should because you guys are focusing too much on Resistances and not enough on armor. The optimal ratio is widely regarded to be a 1 resistance to 10 armor, to not get hit by the diminishing returns of the damage mitigation system the game incorporates.
you need to either build up much more armor to catch up to your resistances, or you need to sacrifice some of the resistance to top up the armor. Of course you are also correct about the life per hit and its importance, having close to 1k would be ideal.
i can tell you that me and my monk friend have gotten all the way to diablo and his gear was no wear near good good as that it might be the build you are using because he can tank every mob and almost every elite pack for long a good while just try and mess with your build and be prepared to die a lot
he had roughly 39-49k health depending on what we needed

I'm lol'ing at you. My armor is uncanny high for a Monk, and my resistances and armor trump most of the "celebrity" Monks that you see on youtube. The problem isn't my stats, the problem is that melees get punished way too hard by magic damage. Just nerf the damage magic affixes do to us and you fix the problem.
When I can face roll elites on my Demon Hunter with 10K HP, and then get one shotted by The Butcher's "fan hook" it makes it fairly obvious that the problem lies in the Elite's affixes. If my gear were such an issue my monk wouldn't be able to stand in front of Belial of Azmodan and make no attempt to dodge their attacks while never dropping below 80% health (something I frequently do). Yet this same Monk can't do shit to Elites.
Affixes are simply doing too much damage to melees, otherwise I would run into similar problems on boss fights.

If you are so much better than the "celebrity" monks, why are you the one pouting?
Bottom line, inferno is meant to be hard. Sure, monk is the gimp of the heroes but they are still very capable of progressing. Suck it up and continue on. Maybe watch some of those celebrities and see how they get by.
In my opinion, it is a waste of stats to stack fully in resist or armor. You'll see that the more resist you have, the more you'll need to reduce 1% more damage. I'm currently in act3, having the same problems as you (I can make progress until find an impossible elite pack =/ ). I think you need more life and attack speed, not saying that Life on hit doesnt worth (besides your life on hit is very low), but attack speed will make you gain more damage, more life regen (when attacking) and more spirit regen. I'm currently using dual wield and didnt see a shield that would make survive more =/
But that guy who said that a ranged class is easier, it is well known that. In fact, a ranged class doesnt need equips or farm to progress in inferno, just some brain to kite the adds and kill them fast enough; besides, a melee class need to survive if it wants to dps the adds. So sad that it is unbalanced by blizz =/

I'm starting to think that it might be a life on hit issue. For someone who's passed inferno act three, did you gear for life on hit?
