So I'm not as good as a lot of you. Clearly this video I did stand in the fire on purpose just to show how fast I die. But a lot of times I don't even have time to react. I feel that my class can't stand toe to toe with anything or he will die instant unless its a plain old melee. Once range / casting is brought into it I am pretty much a dead man.

Any help would be great. Like I said I rather stand up to the mobs not run around like a chicken head cut off. Not sure if that is possible even if I stack a billion life blizzard has made the healing abilities capped if I recalled because of how others gain our effects near us.
You seem to have alot of spirit spenders, and not enough defensive moves at first glance. I would also take Healing Mantra with the Boon rune and spam the shit out of it every 3 sec (the absorb timer). My preference is Evasion with armor. Spamming mantra for their 3 second buffs on activation is a huge part of our defensive playstyle.
My 4 man farm group recently did inferno trash to butcher a few times and I agree a bit monk survivabilty is really cooldown rotation reliant and can be a roll of the dice. Here's my current build http://us.battle.net/d3/en/calculator/monk#aTXghY!YXb!ZcZYaa
I go serenity, winds, mystic ally, mantra healing, fists and lashing tail.
Open with serenity and while your protected generate some spirit. Then use winds, followed by mantra of healing. Then summon your mystic ally. Then spam mantra of healing like you would a health pot in diablo 2. Give that a shot.

I've found that in Hell/Inferno you have to basically build your monk around survivability. Essentially you don't pick up ANY skills unless it helps you survive.
I REALLY like lashing tail kick runed out with the stun. Here's my build for my 58 monk in Act 3.

Also you want to consider using a 1h and shield. It gives you more mitigation and frees up a passive slot. The DPS loss is really negligible.
