I've seen weapons with +30% (number varying) damage stat.
My question is, is that damage already counted in weapon dps, or will it count once you equip the weapon?
For example, lets compare two 1000 dps weapons with exactly the same stats, but one of them with +50% damage. Will the end effect be the same on both weapons?
any +(elemental) damage, +min dam, +max dam and +% dam are taken into account by the damage range shown by the weapon and therefor by it's total DPS shown.
I'm 99% sure this is the case as well. The white damage range should include all damage modifiers AFAIK.
IAS is as you can see the attack speed of the weapon is increased but it will go even higher as the rest of your IAS is counted once equipped. The reason for this is the attacks per second will go up on the weapon itself.
ias on weapon yes, crit dmg and crit chance not - same reason for why str/int/dex is not included, it depends on the other values you have while ias on a weapon just gives a straight increase to weapon dps regardless of what other stats you have (10 % ias will always be a 10% dps increase - of course other stats then multiply this 10% aswell)
so basically, when choosing a weapon, I should only look at the general DPS and +dex/str/int/vit, cause all other stuff is insluded in the DPS anyway?

Not necessarily, for me (a monk) i would take 600 LoH, and a 1.7 Attack Speed weapon over a weapon with 1 APS and no life on hit(or even with 600 life on hit) any day, even if they have slightly less damage. Just because something has higher damage doesn't mean it will be better for you.
+ elemental damage, IAS, + min/max damage, + % damage are included in the weapon dps
dex,str,int,crit damage are NOT included in the dps - these will reflect on your overall dps value
Well obiously life steal was not really included in my question. It falls in the misc category, like freeze on hit and stuff.
Ok, life steal is not included, it doesn't make my other point false. I would MUCH rather have a weapon with 1.7 APS with 1k DPS than a weapon with 1 APS and 1.1k DPS. The increased life on hit (almost twice as much, due to higher speed) is still something to take into consideration. So you still have to look at crit, increased crit damage, APS , and damage. THEN you can only look at stats...and also procs like Fear, Stun, Freeze, Life on Hit, etc.
Also, as others said above crit% and crit damage cannot be calculated in weapon damage because it depends on your other gear. IE: Crit damage% does more if you have more crit and vice versa.

how will you include +crit chance?
it depends on the +crit dmg. and THIS varies at every char...
the same thing with crit dmg (but the other way round...)
Blizzard might have some kind of weird averaged out algorithm for it.
I just know what sharpshooter does with the overall dps and its uncanny.
Rookie move, dont use sharpshooter when looking at an upgrade (dont use it all all if you can ) Either way short of the long is this...
Only things that matter and need to be taken into account (even knowing hovering over to see the dmg increase is the one nice number you will ever need )

2: Socket/bonus crit dmg, simple enough, the socket and or crit bonus is always a huge dps boost and is its own number and wont effect you til you A: hover over the item, or B: equip it..also dont have sharpshooter on as this will show false dps gains...rookie.
3: stats, the last thing you need to worry about on a weapon is stats. If a weapon has great dps and a socket and has no viable stats for you...WHOCARES. It will always be a dps upgrade in almost every situation.
There are times where a lower dps weapon out dps's a higher dps weapon 'off paper' when the weapons are around 150dmg apart and the lower weapon has crit dmg and a socket...and the higher one doesnt. if you have atleast 10% to crit, the lower dps weapon wins.
Quickly though, the number you see when you hover on an item to see the damage increase, that is the number you always get. It takes all gems, stats, and other affixes into account. The only time that changes is with skills like sharpshooter and can show you 10-20k dmg upgrades when they are really much less. But im sure you have figured that out the hard way already.
