I'll admit it: I'm a compulsive collector. And you?
In D2 I can't let a green drop on the groung not even when I know it's my 2000th Isenhart's Case.
But that's not big trouble since with 3rd party software or by creating mules I can store all the stuff I find.
D3 is going to be different, stash is big but not unlimited, characters will be limited (even if I hope Blizz will let us buy characters slot by gold like we can buy stash tabs) and we need to salvage stuff for crafting.
Valuable stuff will be sold on Auction Houses, too.
Managing stash space will require to sell items sooner or later, but I'd still like to keep track of what I've found, at least about uniques and sets.
In D2 there where items which were not so powerful or useful but were difficult to find (like Greyform, if memory serves) and it was an achievement to be able to collect all of them.
I'd like a feature which would let me keep track of what I've found which will automatically add an entry every time I find (for the first time) a unique (or set) item.
So when you begin your record would be empty and while you progress and find stuff it will populate with entries.
Blizz could also give us some rewards for completing rosters, like Treasure Hunter or something like that.
I think it would be nice and I'd like something like that to be in the game.
I used to be really bad for doing this, I'd keep any unique/set item I found, or anything I thought was really cool, but most times I never did anything with the stuff anyway, so I kind of stopped doing that. Since there's an auction house and other means to make use of items in Diablo III, I can't see that I will keep anything that I don't think I might have a use for later on in the game.
I think that would be an awesome idea to have something to keep track of items you've found in game. It would be cool if it told you what monster you killed that dropped the item. It would be cool to see the list fill up as you progress through the game.
I'm probably going to sell or salvage anything that I don't use/plan on using in the near future. I do sometimes have hoarding problems, but it's nothing you can't change

Interesting thought, but isn't it gonna be difficult? If I remember correctly, isn't item's stats and affixes randomly added? This will almost make it impossible too keep track...

I was not referring to every single copy of a unique but something like when you find your very first "Griswold Edge" in your record appear something like "Griswold Egde, 31/10/2011, Damp Cellar, Risen, char name and class".
if you find a second, a third and so on it will not be recorded.
Also just keeping notice only of uniques and sets (fixed names) should make it easy to implement (a txt file would suffice)
This way we can check what we have found, when, where and who/what dropped it and comparing with other players we can see what we got and what they got.
Let's suppose in game there are 7 VERY rare normal unique items like Greyform in D2, collecting all of them could be an achievement and could be rewarded too (by something you can put on your banner, I think).
Ugh, I'm horrible at this. I'll pick up every single magic item or higher and take it back to town so that I can sell it for money that I really didn't need or use. I kept a few item-items but I was the worst with gems. In one of my Bnet characters I had his entire stash--cube included--filled with gems, half of them perfect, and I never used any of them. I actually just gave one or two away to people who wanted them. I still do this.

I always keep items that I believe I can use for an alt. Outside of that, I would still keep stuff to trade. Also kept items which I didn't know their worth; nothing worse than selling something you later find out was amazing.
@ the guy who said he never used mule accounts... HOWWWWWWWWWWWWWWWWWWW?! I remember having 3-4 mule accounts AT A TIME because I had so many good items. Then again, most of my inventory was full of charms =/
All I wanted was a way to keep track in game of which uniques and set items I'd found and show some info on them - kinda like the way the Bestiary in game currently works.
I can't imagine my plan for Diablo 3 ever requiring more inventory space. The best items get kept, the second best items, or items for other classes get sold on the AH or, if that's not worth it, broken into mats which are then, wait for it, sold on the AH.
I suspect though since there will be relatively few "long term" players that will be playing in normal much since there's no reason really to start characters over, that pretty quickly the Normal and Nightmare mats won't be worth much. I expect the Hell and Inferno mats to maintain significant value over time.
I don't understand the purpose of hoarding all this gear when you could sell it for gear that you actually have on your character. In Hardcore I understand, but in softcore? I don't get it at all.

In D3 crafting materials and gold will be a must so it's going to be difficult to collect stuff.
That's why I'd like to have a feature to keep track of what I've found.
And if some gear, not necessarily uber-good, is uber-rare, well, collecting all the rarest stuff would be another challenge.
im not really a hoarder in the sense that ill hold onto everything, but i do like to collect low level items for new characters such as hotspurs, biggons bonnet, greyform, hand of broc, lenymo, pelta lunata, etc. all the uniques on a low level character made the character feel so much more epic.
but with the change of skill system, now being able to swap skills, theres no reason to make multiple characters, so once you make one of each class, no reason to make another, therefore no reason to keep such items

(this build was before D3 launched... looking back on it now - i had no idea what i was doing)
I used to have my stash full of full rejuvenation potions. They were easy to make and useful, but I could never get myself to use them, even in certain death situations. I always foolishly convinced myself that I would survive.
I pick up absolutely every item I come across. Most of them will be broken-down into mats, but I will try to keep some of the better ones to sell. However, I am a hoarder by nature and just know I will fill the stash with useless crap that I cant get rid of. I just need to buckle down and actually DE things, or sell them.
Maybe D3 will be able to break me of the hoarding habit.

I think I will try playing a character that only uses normal gear and see how far he/she can go.
Later, I will stash the good stuff.
