Blizzard has said they want gold to have value and be a traded commodity. To do this there needs to be money sinks. Things players will want to invest or spend money towards to establish a supply/demand.
What do you want to see that isn't over the top that is a way to spend gold? (Other then repairs, potions, scrolls...)
Some off the top of my head...just throwing out ideas, gets more creative responses. (Many WoW influenced...)
1) Respecs
2) Bigger Stash Sizes (WoW, think bank slots)
3) Jewelry, rings/amulets. Good ones but not best of the best.
4) Sockets, adding socket(s) for gold.
5) Gambling, this time with much better odds.
6) Armor Dye, good for individualization. Blizzard can make some terrible looking armor, now you can change it up...
7) Mercenaries, better customization options.
8) Horadric Cube Recipe Materials (WoW, think of vendor purchased materials for recipes)
9) Tabards, not guild related, more self representation and individualism.
10) Mounts, not a fan of this but some like it...
11) Weapon Enchants, like the runes in the gameplay video. Also for effects, different color blade effects, blood stained, rusted, etc...
Basically many of these are toward customization... I know I am not the only one that didn't like joining a channel to see 30 copies of myself.
Some useful shop equipment would be nice. Pissed me off in D2 how they didn't sell normal items. Everything had to be a useless magical. Please Blizzard, give us a way to buy base items and be able to customize them as we like.

You can also add to that list of having weapons/armor for sale by the merchant that can only be bought and not found by monster drops. This would surely add power to the gold.

Maybe Crafting could be a good way to spend your gold. You go the smith and ask him to put a certain attribute in your weapon, the more powerful the attribute, the more expensive the crafting. Of course this would not be possible for the best attributes, but it would still be nice adding a "+20% weapon damage" to your weapon.

I know, but I don't have a real reason to say they are ridiculous. I just don't like them and don't think they belong in Diablo. I think a awesome gold sink would be stash or bank size, whatever its called in D3. Like the op has listed as an idea more slots for more gear would be a great gold sink seeing the game is all about accumlating tons of gear to trade off to other players and such....obviously more then this would be needed but this is def one I can see happening in some way shape or form

I wouldn't call wagers on dueling a money sink either... I didn't add Buffs/Scrolls for a reason but when I started thinking about it in D2 terms and less WoW terms, I started to like it.
Scrolls, only 1 usable at a time, 5-10 minute time limit. 30 minute cooldown from using same scroll (can't use same scroll back to back). Takes the place, or adds to... Shrines.

+ Skills
+ Mana or Health Regen
etc...

Everything! I don't know, I rather not have to use one... It's not like an MMO where 2-3 same level mobs could kill you, and you just want to ride past. I rather have +speed gear and run faster, as it has been. If teleport is going to act the same, Wizards will never buy mounts after mid level.
Another idea for a gold sink is a traveling system perhaps. Using the Waypoints comes at a cost of gold to use the magic needed for the teleportation.

Town "X" to Waypoint 1, 1g... to waypoint 10, 10g. From waypoint # to town, free. During the same game, once you pay to go the a certain way point once, that same waypoint will be free. (Pay once per game, could have it incremental as well, 10g gets you all waypoints for that act, 1g each. 5g for the first half)
I already have a feeling they won't let you do Boss runs as easy as D2... i.e. Waypoint to Durance Lvl 2 for easy Meph farming. I think bosses will take much more time to do.
I like the idea of being able to modify gear with gold. And gambling was fun back in D2 but only because money was irrelevant back then. Come to think of it, I never won anything useful with gambling.

I don't know if I agree with tolls on "taking ships across the sea" but maybe for an easier access root. Like in a dungeon you can pay to have guards assist you, or pay to use a bridge they made. Or you could choose to try to defeat them and use the bridge anyway. (off topic)
I really want an auction house, but not like WoW's. I wouldn't want people to just sit by an auction house all day like in WoW. I don't know how they could make it different.
I don't really agree with the color change of armor because then you would see giant pink barbarians running around all the time, not very diablo-y.
Stash's maybe gain interest over time? Maybe that's stretching it.. lending money to vendors gain interest over time, as well as getting a discount at that vendor. I kind of took that idea from Fable II, but it was fun.. I don't know if it would fit into diablo though.

EDIT: there are basically the same things as the scrolls mentioned before, I didn't realize there was more than 1 page of posts, sorry.

I really like the waypoint idea, but i think there needs to be more to it than that. Just walking up to a waypoint and putting a coin in the machine so you can use it seems like a laundromat or something. Maybe instead have some kind of item that you buy from vendors (or find better quality ones) that has a charge on it, a certain number of uses that you could pay a mage NPC to recharge for you.

Haven't they already said that you won't have hireable companions? But that you will randomly encounter people who will help you for a short duration?
Also, the best way to make gold matter, would be to have the merchants sell items that are worth buying after you have been playing for a while. You oughtta be able to buy comparable equipment to the good items you find--not uniques and set items obviously, but rares should be buyable.
