Should Diablo 3 adopt an in-game bestiary system where you can view all the stats of every creatures you killed complete with their interactive 3D models (zoomable and 360 degree turns)?
D2 already did that in part. It told you what things were immune to. So did Diablo 1. Though you did have to kill 16 of one type before you found out said info, that's all you really need.
What is is and how do you kill it.
But for a good read you can include that stuff in the manual.

Yes yes, but like the bestiary of DMC 1 if that's the case, not the shitty version we've gotten in the later installments.

No. If it is included, it should be from an in-game perspective. Stories, legends and observationsof the monsters that add flavour, not how much hp they have.
PlugY for Diablo II allows you to reset skills and stats, transfer items between characters in singleplayer, obtain all ladder runewords and do all Uberquests while offline. It is the only way to do all of the above. Please use it.

how about when you go to a new location, you can talk to the locals about the monsters around the area for a bit of a backstory. I doubt alot of people would be interested
i like the concept, but it would be cooler if when you saw a monster, you would use a certain ability on it. then you would go to the town and talk to cain, and he would tell you what the monster is and give you a little lore on the monster, how to kill, origins, etc.

Perhaps not so much an in game beastiary but something along the lines of. A rare drop from a monster of any type perhaps only in the hardest difficulty for example. You take this "head" or "specimen" (blood, aura crystal etc) and turn one or many of them into a Vizjerei NPC or even deckard cain himself to study. After turning in this said rare item the NPC chosen would cast an enchantment spell upon you with permanent effect to resist the monsters dmg's or increase yours to him a small %. It could be put in place instead of the permanent resists (scroll or potion? i forget) in the last act of diablo 2 LOD. You guys can elaborate on other ideas I kinda just thought that up while reading this post so that is why its so poorly written/half baked hehe.

Honestly, who cares how many millions of carvers you have killed. They're just carvers.
If you want to know more important kills like bosses, you can just look at your quest log.
