Here's a quick question for those who already have access or are better informed than I am: How do characters of each class qualify for dual wielding? I've seen Barbarians with access from the gate but I haven't seen any info for other classes. I'm sort of assuming only Barbs can dual wield, but I'd love to know if this isn't the case.
I ask because I'm thinking about the viability of a dual wielding Melee Wizard build based on melee attack instead of Spectral Blade (Spectral Blade looks like an extremely lame way to kill things, in my opinion... I'd rather physically whack things even as a Wizard). I'm excited about what I think is very cool and viable build, but it would be even cooler and perhaps more effective if I could have higher melee hit frequency.
As far as I know, barb and monk dual wield, and DH can DW hand xbows. I believe wizard and WD cannot, they can use a 1 hand, but then only a shiled/orb/class specific in the other.
Snaks42 is correct, only the Monk/Barbarian/Demon Hunter can dualwield (DW) their weapons.
As far as viability of DW? Using a 2-handed weapon vs two 1-handed weapons is the same across all games. But in diablo, you have the addition of weapon effects. So you can have a 2-hand weapon that does fire damage, or two 1-handed weapons with one doing lightning dmg an the other doing fire dmg.
Specifically, using a 2-handed weapon gives you powerful hits coupled with slow attacks, while 1-handed weapons provide quick, fast attacks with less power/damage with each hit. Which is better? I think it depends on your items in question, any passives that might benefit one over the other and even the situation.
Personally, I love seeing the monk's speed with dual-wielding.
From what we've learned from our dear friendly beta testers in the forums 2H weapons deal WAY more damage than 1H. Barbarians can dual wield 2H weapons but have an even heavier class based weapons that cannot be dual wielded.
In short - use 2H weapons with classes that don't require a lot of resource generation and 1H weapons for fast resource gathering.

Figured I'd ask this here. For the DH, can you equip a 2H Bow/Crossbow and also equip a quiver? Or can you only equip the quiver if you are a using a 1H Xbox in your main hand.

Are there quivers in Diablo 3? I thought they may have just removed them and given ranged weapons infinite ammo. A lot of games seem to do this now.

There are quivers. I think that bows still have infinite ammo, but the quiver can add extra effects to the bow. This makes a bow more comparable with 2 xbows that each have effects of their own.
