Sure, if you're fighting against demons 100% of the time, it's 25% more DPS. Note though that even a perfect Sever roll will unlikely get you to a DPS high enough to justify giving up a good rare weapon with socket+crit hit damage.
The reason to use Sever is the "rest in pieces" affix... if you're looking for gore, try it out, it's like playing Starship Troopers.

Same affixes are additive, yes. 25% Sever and 15% Tyrael's give you 40% more damage versus demons (I think some people have extensively tested this on the official forums, remember having read about this there). In particular Tyrael's was extremely effective in the early days - not just against demons but in general. Since 300k DPS has become almost standard, it's become virtually impossible to justify the DPS/EHP loss that comes with these items; similar to Frostburn's. Envy the monks, WKL is still worth it ;-)

There is a issue troubling my mind: generaly speaking, not all enemies are Demons. So, would the hidden "against demons" DPS increase of a Sever + a Tyrael MIght be effective along all the areas ? Or just bosses ? Or just some specific places ?

How is the mega-crit-final-blow-gore-everywhere calculated ?
Bonus points: I saw a video about a DH + Barb farming today with a combination of a Sever and Marked For Death-Grim Reaper that made me think about its effectiveness... What do you guys think ?
No idea about your second point (would be interested as well, I might test it with my bell monk tonight who just happened to have found a Sever).
Regarding your first point, I think most demons can be found on Fields of Slaughter and Arreat Crater. There are a few in act 2 as well (Fallen), but they only make up for a small percentage of XP. And of course act 4 is packed with demons. However, in none of these areas you'll fight against demons 100% of the time. My guess is that it's more like 50% to 70%.
There was some discussion about whether ubers are demons or not, and many claim that indeed all bosses are demons (not sure about all 6, but Ghom, Rak, and SB would make sense imho). That might be interesting to try out (unfortunately I don't have keys to waste). SoJ+Sever+Tyrael's = 1.3*(1+(.25+.15)) => ~82% increased damage makes up for a lot of DPS that gets lost along the way.
Ghom, Raka, and SB are the only demon ubers (I use a tyrael's against them for my barb), the others are not.

Yeah I run a -5 hota for ubers. Makes a gigantic difference in kill time primarily because you can hammer for so much longer without running out of fury. Although with a good cm along, you can almost always hammer both ubers at once so your'e always at full fury. In that case, running berserker's rage is a good dps boost.

Just a build-question: Is this with the Smash-rune? How big is the radius? Or do you intentionally give up that extra (single-target) damage to nuke both at once?
I always use the Smash rune. It's just positioning. Against Raka/ghom, as long as they are next to each other or close to next each other you can hit both. You have to stand on one side, and while holding shift, hammer across one to the other. It takes a bit of practice but once you get it, its easy. Look at it this way, 1 is ghom, 2 is raka, x is you.

That's a nice estimate. It means the farming on those areas would be slightly faster with a Sever than with a similar DPS rare weapon.
Although I'm more inclined to use one against Uber's Rakanoth, Ghom and Siegebreaker. I'll do some timed kills against Ghom and see how that goes. (Edit: MP8 runs with my current gear).

I've done some runs last night with my monk and I changed the EF for a lower DPS Sever, and didn't notice much difference on killspeed and survivability, but the slower attack speed.

If you could get a 6% <whatever> / 30% elite / 12% Sweeping Wind SoJ that would actually a great ring for your monk... :-) I have a similar one but don't know when I'll get to do ubers next time.
For Monk's I've tested a 29 elites, 12FoT, and it made no difference in kill time compared to my rare. I've talked to other monk buddies and they have came to a similar conclusion. Now if you need the spirit regen for like TR or something, that's a different story.
Out of my characters, a Barb's HoTa SOJ makes a huge a difference, a WD's Firebats one made a minor difference, a Monk's FoT madeno difference. For wizards if you're running CM you need the attack speed, so a SOJ doesnt really make any sense.

I got a 1060 dps/25%/OS Sever today (and a 15% Tyrael's as well, quite lucky). Holy crap, this is so much fun on MP10.
I was playing around with a damage calc and if I replace my axe with a 1100dps, 25% demons, OS, sever i'd actually do a bit more true damage. Albeit, only against demons and I'd lose the LS.
